Solo: 15min Crunchy Chicken Salad

Crunchy chicken served on a bed of spinach topped with cucumber and onion salsa.




Ingredients to serve 1

  • 2 x chicken breasts
  • ¼ tsp x chilli powder
  • ¼ x red onion – slice finely
  • ½ x cucumber – dice
  • 2 tbsp x olive oil (from your pantry)
  • ½ x lemon - juice
  • 2 sachets x honey
  • 8g x parsley – roughly chop
  • 100g x spinach - slice
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above.

Step 2

Salsa - In a large bowl, combine the cucumber, onions, 2 tbsp of olive oil, lemon juice, honey and parsley. Season with a small pinch of salt and pepper and toss to combine.

Step 3

Chicken - Season chicken breasts with salt, pepper and chilli powder. Place a frying pan with a few glugs of olive oil on medium to high heat. Add chicken and cook for about 4 minutes on either side until browned.

Step 4

Serve chicken sliced on a bed of spinach topped with the cucumber and onion salsa.
