Solo: Pork Steak with Chard & Beans

Hearty, simple and delicious. Paprika flavoured pork steak accompanied by a delicious mix of Swiss Chard and cannellini beans as well as baby potatoes.




Ingredients to serve 1

  • 175g x baby potatoes – cut in half
  • 1 x pork steak
  • ¼ tsp x paprika
  • 75g x Swiss chard – cut into thick ribbons
  • ¼ x onion – peel and chop finely
  • ¼ tin x cannellini beans – open, drain and rinse
  • ½ tbsp x red wine vinegar
  • . x butter, olive oil (from your pantry)
  • . x tin foil (from your pantry)
  • . x freshly ground salt & pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above.

Step 2

Place a saucepan of salted boiling water on medium to high heat. Add the halved baby potatoes and simmer gently for 15 minutes or until potatoes are tender. Remove from the water and keep warm.

Step 3

Season the pork with the paprika, freshly ground salt & pepper. Place a little olive oil (enough to coat the pan) in a frying pan over medium to high heat. Add the pork steak and panfry (undisturbed) for 4 minutes on one side. Turn over using spoons or tongs and panfry for another 3 to 4 minutes. Transfer to a plate and cover with tin foil.

Step 4

While the pork is cooking heat a few glugs of olive oil in another frying pan (or saucepan) over medium to high heat. Add the onion and sauté for about 5 minutes until translucent and turning brown. Then add the cannellini beans and Swiss chard and stir fry until the chard is wilted and the beans are warmed up. Mix in the red wine vinegar just before serving.

Step 5

To serve, place the pork steak on the plate and add a serving of chard and baby potatoes on the side. Dot the potatoes with a few pats of butter.
