Solo: Braised Sausages on Mashed Potato & Cabbage

Pan fried pork sausages topped with a creamy onion sauce, served with mustard mashed potatoes and cabbage wedges.




Ingredients to serve 1

  • ⅛ x cabbage (cut into wedges)
  • ½ tsp x caraway seeds
  • ½ tsp x chicken stock granules
  • 65ml x boiling water (for the broth)
  • ½ tsp x Dijon Mustard
  • ½ x onions (halve and slice)
  • 2 x pork sausages
  • 1 x potatoes (peel & cube 1cm)
  • 1 tbsp x sour cream
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above. Put the kettle on to boil. Once boiled, pour water (quantities above) into a jug. Mix in the chicken stock granules to make the chicken broth. Set aside.

Step 2

Potatoes: Place a large saucepan on a medium-high heat, pour in the boiling water with a little salt. Add the cubed potatoes and cook for about 15 minutes until soft. Drain, add a few splashes of milk, a knob of butter, Dijon mustard, salt and pepper to taste and mash well. Keep warm.

Step 3

Place a large frying pan on medium to high heat and add a few glugs of olive oil. Add the sausage and fry them for 10 minutes, turning as they take colour. Remove from the pan and set aside. Wipe out the pan with kitchen towel.

Step 4

Melt a knob of butter (about a tablespoon) in the same pan and add onions. Season with salt and pepper, cover and cook for 10mins, stirring the pan a few times, until the onions are softening and dark golden.

Step 5

Sprinkle the caraway seeds into the onions, fry for 2mins until fragrant, the nestle the cabbage wedges into the pan. Pour in the chicken broth, pop on the id and simmer for medium to low heat for 5mins. Add the sausages back into the pan and cook for 10 minutes more until the cabbage is tender and bright green and the sausages are cooked all the way through.

Step 6

Spoon in the sour cream and shake the pan a few times to create a rich onion sauce.

Step 7

Serve the sausages and its rich sauce on top of the mustard mashed potatoes with a cabbage wedge on the side.
