Tex Mex Casserole

Tex Mex Casserole

A mild Tex Mex beef mince casserole, topped with jalapeños and cheese. Served with green salad and a dollop of sour cream on the side.




Ingredients to serve 2

  • 400g x beef mince
  • 1½ tbsp x Tex Mex Spice Mix
  • 1 tin x chopped tomatoes
  • 2 x jalapeños
  • 100g x cheese – grate coarsely
  • 120ml x sour cream
  • 1 x spring onions – slice finely
  • 1 x gem lettuces – slice or tear into pieces
  • 1 tbsp x lemon juice
  • 1½ tbsp x olive oil for the salad (from your pantry)
  • salt and pepper (from your pantry)

Ingredients to serve 4

  • 800g x beef mince
  • 3 tbsp x Tex Mex Spice Mix
  • 2 tins x chopped tomatoes
  • 4 x jalapeños
  • 200g x cheese – grate coarsely
  • 240ml x sour cream
  • 2 x spring onions – slice finely
  • 2 x gem lettuces – slice or tear into pieces
  • 2 tbsp x lemon juice
  • 3 tbsp x olive oil for the salad (from your pantry)
  • salt and pepper (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above. Halve the lemon and juice.

Step 2

Tex Mex casserole: Place a large frying pan on medium to heat. Dry fry the beef until browned – 3 to 5 minutes. It will stick a bit until the fat is released. Then add the Tex Mex Spice Mix and tinned tomatoes. Stir well, turn the heat down to medium and allow to simmer for 5 minutes. Season if needed with salt and pepper. Place the mixture in a casserole dish and top with jalapeños and cheese. Pop into the middle of the oven for 20 minutes, until nicely browned on top.

Step 3

Sour cream: Mix the sour cream and spring onions. Place into a small serving dish and set aside.

Step 4

Green salad: Add these ingredients to a salad bowl: lettuce, olive oil and lemon juice (see quantities above). Season to taste with salt and pepper and toss well.

Step 5

Serve: Divide the casserole between the plates with a dollop of sour cream on top and a serving of green salad on the side.
