Chicken Soup

Delicious chicken soup with fresh herbs, cauliflower, celery, onion and a sprinkling of paprika for a flavour kick!




Ingredients to serve 2

  • 1 stalk x celery – dice (5mm)
  • ½ x onion – peel and chop
  • 1 clove x garlic – crush, peel and chop finely
  • 5g x fresh thyme – strip off leaves
  • ¼ tsp x paprika
  • 3 tsp x chicken stock granules
  • 2 cups x boiling water (for chicken stock)
  • 2 x chicken breasts – cut into cubes
  • ½ x cauliflower – grate coarsely
  • salt and pepper (from your pantry)
  • olive oil (from your pantry)

  • 2 stalks x celery – dice (5mm)

  • 2 cloves x garlic – crush, peel and chop finely
  • 10g x fresh thyme – strip off leaves
  • ½ tsp x paprika
  • 6 tsp x chicken stock granules
  • 4 cups x boiling water (for chicken stock)
  • 4 x chicken breasts – cut into cubes
  • 1 x cauliflower – grate coarsely
  • salt and pepper (from your pantry)
  • olive oil (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above. Dissolve the chicken stock granules in the boiling water and set aside.

Step 2

Soup: Heat a few glugs of olive oil in a large saucepan over medium heat. Add the celery and onion and cook for about 5 minutes until tender. Season to taste with salt. Add the garlic, thyme, and paprika and cook for another minute. Stir in the chicken and cauliflower and bring to a gentle boil. Once boiling, turn the heat down to medium/low and cook for 10 to 12 minutes until the chicken is cooked through. Check seasoning and add salt and pepper if needed.

Step 3

Serve: Divide the soup between the bowls.
