Solo: Chicken Soup

Delicious chicken soup with fresh herbs, cauliflower, celery, onion and a sprinkling of paprika for a flavour kick!

Ingredients to serve 1

  • ½ stalk x celery – dice (5mm)
  • ¼ x onion – peel and chop
  • ½ clove x garlic – crush, peel and chop finely
  • 3g x fresh thyme – strip off leaves
  • ⅛ tsp x paprika
  • 1½ tsp x chicken stock granules
  • 1 cup x boiling water (for chicken stock)
  • 1 x chicken breast – cut into cubes
  • ¼ x cauliflower – grate coarsely
  • salt and pepper (from your pantry)
  • olive oil (from your pantry)


Step 1

Preparation: Prepare all ingredients as indicated above. Dissolve the chicken stock granules in the boiling water and set aside.

Step 2

Soup: Heat a few glugs of olive oil in a large saucepan over medium heat. Add the celery and onion and cook for about 5 minutes until tender. Season to taste with salt. Add the garlic, thyme, and paprika and cook for another minute. Stir in the chicken and cauliflower and bring to a gentle boil. Once boiling, turn the heat down to medium/low and cook for 10 to 12 minutes until the chicken is cooked through. Check seasoning and add salt and pepper if needed.

Step 3

Serve: Place the soup in the bowl.
