Solo: Garlic Butter Sirloin

Pan fried sirloin steak with garlic butter and rosemary, served with sautéed mushrooms and green beans.

Ingredients to serve 1

  • 1 x sirloin steak
  • 1 clove x garlic – crush, peel and chop finely
  • 3g x fresh rosemary – chop finely
  • 100g x green beans – cut off ends
  • 75g x button mushrooms – slice
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt and pepper (from your pantry)
  • tin foil (from your pantry)

Step 1

Preparation: Prepare ingredients as indicated above. Boil the kettle. Rub olive oil all over the steaks then scatter with freshly ground salt and pepper and set aside.

Step 2

Sirloin steak: Place a frying pan on high heat for a few minutes. When hot, add the steak and pan fry 3 or 4 minutes on each side, turning only once with tongs (or a pair of spoons). In the last minute a few knobs of butter, garlic and rosemary to the pan. Once the butter has melted spoon the butter mixture over the steak for about 30 seconds. Then transfer to a plate, cover with tin foil and allow to rest.

Step 3

Green beans: Place a saucepan on medium-high heat, add the green beans with enough boiling water to cover by 2cm. Add a pinch of salt and cook for 3-4 minutes until bright green and cooked, but with a slight bite. Drain, melt over a small knob of butter and season with salt & pepper.

Step 4

Mushrooms: Place a frying pan over medium to high heat. Add a few knobs of butter, and once melted, add the mushrooms and season to taste with salt and pepper. Cook for about 5 minutes – stirring occasionally – until the mushrooms start to brown.

Step 5

Serve: Slice the steak and serve on top of the green beans with sautéed mushrooms on the side.
