Solo: Sausage Foil Packets

Chorizo sausage baked with cajun baby potatoes, green beans & button mushrooms.

Ingredients to serve 1

  • 100g x chorizo sausage – slice at an angle (5mm)
  • 125g x baby potatoes – cut into quarters
  • 100g x green beans – cut off ends
  • 75g x button mushrooms - halve
  • ¼ x onion – peel and chop coarsely
  • 1 tsp x Cajun Spice
  • 3g x fresh parsley – chop coarsely
  • salt and black pepper (from your pantry)
  • olive oil (from your pantry)
  • tin foil (from your pantry)


Step 1

Preparation: Prepare all ingredients as indicated above. Preheat the oven to 200°C. Cut the tin foil into large pieces – one per person. Each piece should measure about 30cm x 30cm.

Step 2

Foil packets: Place the baby potatoes in the center of each piece of tin foil and curl up the edges around the potatoes so that nothing spills out. Now add equal portions of sausage, mushrooms, green beans and onion into each foil packet. Drizzle each one with about 2 tablespoons of olive oil, Cajun spice and salt & pepper. Now wrap the sides of the foil over the ingredients and seal all round. Place the foil packets on a baking tray and bake in the oven for 25 minutes until done: this is when the vegetables are cooked (fork tender).

Step 3

Serve: Either remove the contents of the packet and plate. Or place the packet on the plate with the foil open. Garnish with the parsley.
