Solo: Easy Classic Lasagne

Layers of pasta sheets between a yummy mince sauce, topped with a cream cheese white sauce and melted mozzerella cheese.




Ingredients to serve 1

  • ¼ x onion - finely chopped
  • ½ x celery – dice finely
  • ½ x carrots - grate coarsely
  • 1 clove x garlic - finely chopped
  • 125g x beef mince
  • ¼ sachet x tomato paste
  • 2 x tomatoes – chop finely
  • 4 x lasagne sheets
  • 50g x cream cheese
  • 40g x grated mozzarella
  • ½ tbsp x mixed herbs
  • ½ tsp x sugar (from your pantry)
  • salt & fresh ground pepper (from your pantry)
  • olive oil (From your pantry)

Method

Step 2

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 3

Mirepoix: Place a pan on medium-high heat with a drizzle of olive oil. Add the onion, celery, carrots and sauté for 5 minutes until slightly golden. Add the garlic and cook for 1 min. Then add the beef mince, season with a little salt and pepper and break the mince up with a spoon. Cook for about 6 mins until browned all over. Stir in the tomato paste and sugar and cook for 1 min, mixing in well with the beef and vegetables. Tip in the chopped tomatoes and simmer for 20 minutes.

Step 4

White sauce: Put the cream cheese in a bowl and mix with 2 tbsp water to loosen it and make a smooth pourable sauce.

Step 5

Assemble: Ladle a little of the mince sauce into the bottom of the roasting tin or casserole dish, spreading the mince sauce all over the base. Place 3 sheets of lasagne on top of the mince sauce overlapping to make it fit, then repeat with more mince sauce and another layer of lasagne sheets. Repeat with a further 2 - 3 layers (depending on the size of your casserole dish) finishing with a layer of lasagne.

Step 6

Assemble: Ladle a little of the mince sauce into the bottom of the roasting tin or casserole dish, spreading the mince sauce all over the base. Place 3 sheets of lasagne on top of the mince sauce overlapping to make it fit, then repeat with more mince sauce and another layer of lasagne sheets. Repeat with a further 2 - 3 layers (depending on the size of your casserole dish) finishing with a layer of lasagne. Then pour the white sauce over the top of the lasagne, top with grated mozzarella. Sprinkle a little bit of mixed herbs over the top and bake for 25–30 minutes until golden and bubbling.

Step 7

Serve immediately or allow to cool and thicken before serving.
