DNUMushroom & Rice Hash with Eggs

One pan stir fried mushroom rice topped with a poached or fried egg.




Ingredients to serve 2

  • 125g x portabellini mushrooms - slice
  • 90g x button mushrooms - slice
  • ½ x onion – peel and chop finely
  • ½ cup x par-boiled brown rice
  • 1 x carrots – grate coarsely
  • 1 x spring onions – slice thinly
  • ¼ tsp x caraway seeds
  • 2 x eggs
  • salt & pepper (from your pantry)
  • olive oil (from your pantry)

Ingredients to serve 4

  • 250g x portabellini mushrooms - slice
  • 180g x button mushrooms - slice
  • 1 x onion – peel and chop finely
  • 1 cup x par-boiled brown rice
  • 2 x carrots – grate coarsely
  • 2 x spring onions – slice thinly
  • ½ tsp x caraway seeds
  • 4 x eggs
  • salt & pepper (from your pantry)
  • olive oil (from your pantry)

Method

Step 1

Preparation: Boil the kettle. Prepare all ingredients as indicated above.

Step 2

Parboiled Brown Rice: Boil the kettle. Pour boiling water (4 cups for 4; 2 cups for 2; 1 cup for 1) into a pot and add the rice with a pinch of salt. Bring to the boil, cover and gently simmer for 18-20 minutes on low heat. Drain if there is any excess water.

Step 3

Rice Hash: In a large saucepan, heat olive oil over medium-high heat; sauté the onions for 5 minutes until golden; then add the mushrooms until lightly browned, 5-7 minutes. Add cooked rice and grated carrots; cook and stir until vegetables are tender, 4-5 minutes. Stir in the spring onions, salt, pepper and caraway seeds; heat through.

Step 4

Poached Eggs: If you’re brave enough to try some poached eggs, place water in a large saucepan or skillet with high sides. Bring to a boil; adjust heat to maintain a gentle simmer. Break cold eggs, one at a time, into a small bowl; holding bowl close to surface of water, slip egg into water. Cook, uncovered, until whites are completely set, and yolks begin to thicken but are not hard (3-5 minutes). Using a slotted spoon, lift the eggs out of the water. Serve over rice mixture.

Step 5

Fried Eggs: if you’re not feeling adventurous or strapped for time then fry the eggs to your liking.

Step 6

Serve the mushroom rice hash in a bowl or plate, and top with either a poached or fried egg.
