Crispy Tofu in Chilli Garlic Sauce

Crispy tofu tossed through chili garlic sauce served with stir-fried greens.




Ingredients to serve 2

  • 100g x Ramen Noodles
  • 1 tbsp x soy sauce
  • 1 tbsp x chili garlic sauce
  • ½ tbsp x sticky brown sugar
  • ½ tbsp x rice vinegar
  • 200g x spring onions
  • 200g x tofu – cut into 1cm cubes, drain & pat dry
  • 100g x cornstarch
  • 100g x green beans – trim ends & slice thinly
  • 1 x bell peppers – chop finely
  • 2 cloves x garlic – crush, peel and chop finely
  • 15g x fresh ginger – chop finely
  • olive oil (from your pantry)
  • paper towels (from your pantry)
  • Salt and Pepper (from your pantry)

Ingredients to serve 4

  • 200g x Ramen Noodles
  • 2 tbsp x soy sauce
  • 2 tbsp x chili garlic sauce
  • 1 tbsp x sticky brown sugar
  • 1 tbsp x rice vinegar
  • 400g x spring onions
  • 400g x tofu – cut into 1cm cubes, drain & pat dry
  • 200g x cornstarch
  • 200g x green beans – trim ends & slice thinly
  • 2 x bell peppers – chop finely
  • 4 cloves x garlic – crush, peel and chop finely
  • 30g x fresh ginger – chop finely
  • olive oil (from your pantry)
  • paper towels (from your pantry)
  • Salt and Pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above. Bring a large saucepan of water to the boil for use in Step 3.

Step 2

Chilli Garlic Sauce Mixture: In a medium sized bowl mix together the soy sauce, chilli garlic sauce, brown sugar and rice vinegar.

Step 3

Spring onions and Noodles: Mince the white parts of spring onions and thinly slice green parts. Once the water in your large saucepan has come to the boil, cook your ramen noodles for 4-5 minutes until just about tender. Drain through a colander and reserve for Step 6.

Step 4

Tofu: Toss the tofu cubes with cornstarch in a bowl. Heat 4 tablespoons of olive oil in a large saucepan over medium-high heat. Add the tofu cubes and cook until crispy and golden brown (5-7 minutes) stirring occasionally. Remove from the pan and drain on paper towels.

Step 5

Green beans: In the same pan, heat 1 tablespoon of olive oil over medium-high heat. Add the green beans and stir-fry until crisp-tender (2-3 minutes). Remove from pan.

Step 6

Tofu and Veg: In the same pan, heat a few glugs of oil over medium-high heat. Add bell peppers and cook for 30 seconds. Add garlic, ginger, and minced white parts of spring onions and stir-fry for 30-45 seconds. Stir in chili garlic sauce; cook and stir until slightly thickened. Remove from heat; stir in tofu cubes, green beans, and ramen noodles.

Step 7

Serve the tofu and veg mix in bowls and sprinkle with your thinly sliced greens of your spring onions.
