Ginger Pork Stir-Fry with Veggie Noodles

Slices of pork tenderloin stir fried in a tasty sauce combo of ginger, chilli, garlic, sesame oil, soy sauce and pumpkin noodles.




Ingredients to serve 2

  • 250g x pork fillet – slice thinly
  • 15g x ginger – peel, grate & chop finely
  • ½ x fresh chilli – slice thinly (keep extra to serve)
  • 1 clove x garlic – peel, grate and chop
  • 1 tbsp x soy sauce
  • 1 tsp x sesame oil
  • 250g x pumpkin noodles
  • 1 x onions – slice thinly
  • 15g x fresh coriander – chop roughly
  • salt and pepper (from your pantry)
  • olive oil (from your pantry)

  • 500g x pork fillet – slice thinly
  • 30g x ginger – peel, grate & chop finely
  • 1 x fresh chilli – slice thinly (keep extra to serve)
  • 2 cloves x garlic – peel, grate and chop
  • 2 tbsp x soy sauce
  • 2 tsp x sesame oil
  • 500g x pumpkin noodles
  • 2 x onions – slice thinly
  • 30g x fresh coriander – chop roughly
  • salt and pepper (from your pantry)
  • olive oil (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Ginger Sauce: In a medium sized bowl add the ginger, chilli, garlic, sesame oil and HALF of the soy sauce. Mix well before adding the pork slices and marinate with your hands. Set aside to marinate.

Step 3

Onions: Place a large saucepan on medium to high with a few glugs of olive oil. Once warm add the onions and sauté for 2-3 minutes until just tender. Remove from pan. Set aside.

Step 4

Using the same pan, add a good glug of olive and add the pork (fry in 2 batches, for 2 – 3 minutes until just cooked through). Turn down the heat and add the onions and pumpkin noodles, toss to combine and allow to cook simmer for a further 5 – 10 minutes, stirring occasionally.

Step 5

Serve the noodles and pork mixture drizzled with the remainder of soy sauce and topped with fresh coriander (if you like chilli, add the remainder sliced chilli for an extra flavour kick)./p>
