Paprika Halloumi Tacos with Salsa

Fried halloumi slices with smoked paprika, served in a warm tortilla wrap with lettuce, chipotle yoghurt and fresh salsa.




Ingredients to serve 2

  • 125g x cherry tomatoes – cut into quarters
  • 1 tbsp x chipotle tabasco sauce
  • 1 x lime – zest & juice
  • 1 x lettuce – slice into ribbons
  • 4 x tortilla wraps
  • 1 tsp x smoked paprika
  • 80ml x yoghurt
  • 100g x halloumi cheese – cut into 1cm slices
  • 5g x fresh mint – chop finely
  • salt & pepper (from your pantry)
  • olive oil (from your pantry)

Ingredients to serve 4

  • 250g x cherry tomatoes – cut into quarters
  • 2 tbsp x chipotle tabasco sauce
  • 2 x lime – zest & juice
  • 2 x lettuce – slice into ribbons
  • 8 x tortilla wraps
  • 2 tsp x smoked paprika
  • 160ml x yoghurt
  • 200g x halloumi cheese – cut into 1cm slices
  • 10g x fresh mint – chop finely
  • salt & pepper (from your pantry)
  • olive oil (from your pantry)

Method

Step 1

Preparation: Preheat the oven at 180°c. Prepare all ingredients as indicated above.

Step 2

Salsa: In a small bowl add the tomatoes, mint, lime juice, zest and season with salt and pepper.

Step 3

Chipotle yoghurt: In a small bowl combine the yoghurt with the chipotle sauce.

Step 4

Halloumi: Add the halloumi slices to a baking tray. Drizzle with olive oil and sprinkle over the smoked paprika. Put the tray directly under the grill for 4-5 minutes or until warmed through, softened and golden brown. Watch them as they could burn easily.

Step 5

Tortillas: Just before serving, heat the tortillas for about 20 seconds on each side in a hot, dry frying pan.

Step 6

Serve: Place the tortillas, lettuce, halloumi, salsa and chipotle yoghurt in the centre of the table, ready to build your tacos and dig in.
