Mushroom Biryani with Cucumber Raita

A mild biryani with portabellini mushrooms, garlic, tomato and raisins. Served with cucumber raita on the side.




Ingredients to serve 2

  • ½ x cucumber – cut into small cubes
  • 15g x seedless raisins
  • 1 ½ tsp x vegetable stock granules
  • 1 ½ tbsp x curry powder
  • 40ml x yoghurt
  • 1 cup x basmati rice
  • 150g x portabellini mushrooms – slice
  • 150g x button mushrooms – slice
  • 1 clove x garlic – crush, peel, grate & chop finely
  • ½ sachet x tomato paste
  • 1 ½ cups x boiling water (for the stock)
  • salt & pepper (from your pantry)
  • olive oil (from your pantry)

Ingredients to serve 4

  • 1 x cucumber – cut into small cubes
  • 30g x seedless raisins
  • 3 tsp x vegetable stock granules
  • 3 tbsp x curry powder
  • 80ml x yoghurt
  • 2 cups x basmati rice
  • 300g x portabellini mushrooms – slice
  • 300g x button mushrooms – slice
  • 2 cloves x garlic – crush, peel, grate & chop finely
  • 1 sachet x tomato paste
  • 3 cups x boiling water (for the stock)
  • salt & pepper (from your pantry)
  • olive oil (from your pantry)

Method

Step 1

Preparation: Boil the kettle. Prepare all ingredients as indicated above.

Step 2

Basmati Rice: Bring a saucepan of lightly salted water to the boil. Add the rice and boil gently for 15 minutes. Once cooked, drain and keep warm in a colander over a saucepan of hot water.

Step 3

Tomato Stock: In a medium sized bowl combine the vegetable stock granules, tomato paste and raisins with boiled water (see quantities above).

Step 4

Veggie Mix: Heat a large saucepan (preferably non-stick) with a drizzle of olive oil over a medium-high heat. Once hot, add the portabellini mushrooms to the pan and cook for 2 minutes. Add the button mushrooms, curry powder and garlic to the pan. Cook for 2 more minutes until fragrant.

Step 5

Biryani: Add the cooked rice to the pan with the tomato stock and increase the heat to high. Give everything a good mix and cook for 3-5 minutes or until the mushrooms are softened.

Step 6

Cucumber Raita: In a medium sized bowl combine the cucumber and yoghurt with salt and pepper, mix well.

Step 7

Serve the mushroom biryani topped with the cucumber raita.
