Method
Before You Begin
Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Bring a large saucepan of salted water to the boil for use in Step 1.
Washing Instruction
Wash your hands and cherry tomatoes well. Rinse your swiss chard thoroughly and drain on paper towel. Brush your mushrooms with a soft basting brush.
Gino's Tip
Due to the starch which comes from the pasta whilst cooking, your reserved pasta water adds not only body but a lovely sheen to your sauce.
Step 1 - Gnocchi Pasta Shells
Cook your gnocchi pasta shells in your large saucepan for 10-12 minutes until "al dente".Drain through a colander, but reserve a cup of your cooking water
Step 2 - Curry Butter
Heat your butter in the microwave for 10-second intervals in a microwavable bowl, until just soft but not liquid. Now mix in your balti paste, almond flour and lemon juice. Season with salt and pepper and reserve till later.
Step 3 - Smoked Chicken Pasta Filling
Heat a large casserole pan over high heat, add a glug of olive oil and fry your quartered button mushrooms for 3-4 minutes. Now add your swiss chard and continue cooking until it wilts about 2-3 minutes. Add your cherry tomatoes and cook until warmed through, about 1-2 minutes. Reduce your temperature to medium, add your cream and cook for another 1-2 minutes. Grab a spoon, taste your filling and season well with salt and pepper. When done, mix in your gnocchi pasta shells and flaked chicken. You should have a very light and minimalist sauce. Use a little of your reserved pasta water to loosen the pasta up.
To Serve
Divide your smoked chicken pasta amongst your servings and top with lashings of your curry butter. Enjoy!
