Gino's Tip
Did you know that Turmeric is great for fighting inflammation? Yes you would need to eat a lot for it to make a significant difference but every little bit adds up;)
Step 1 - Mash
Cook your quartered potatoes in a large saucepan of salted water for 12-15 minutes until cooked and tender. Drain through a colander once done, and rustically mash until smooth, folding in your butter. Taste and season to your liking with salt and pepper.
Step 2 - Roasted Peppers and Greens
Toss your chunked green peppers in a large mixing bowl along with a drizzle of olive oil, salt, and pepper. Scatter onto an oven tray and pop into the oven for 6 minutes.
In the meanwhile, toss your trimmed green beans and crushed garlic in the same mixing bowl with a light drizzle of olive oil and seasoning of salt and pepper. Scatter onto the same oven tray as your green peppers (once they've pre-roasted) and continue roasting your vegetables for 10-12 minutes.
Step 3 - Mango Pork
Season your pork neck steaks with salt and pepper. Heat a large frying pan over med-high heat, add a glug of olive oil and once your pan is hot but not smoking, fry your pork neck steaks for 3-4 minutes on each side until completely cooked through. Transfer to a serving dish.
Reduce the heat to low-medium and add your DD Mango Glaze, heat your sauce through until slightly sticky then add your streaks back to the pan, to glaze in the sauce.
To Serve
Toss your rocket along with your roasted peppers and greens. Divide your mash amongst your servings, top with your roasted peppers and greens and mango pork. Enjoy!
