Method
Before You Begin
Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items"
Washing Instruction
Wash your hands, courgettes and tomatoes well. Rinse your wild rocket thoroughly and drain on paper towel.
Step 1 - Matador Pork
Using a medium mixing bowl marinate your pork sirloin steaks in your Daily Dish Matador Marinade.
Step 2 - Courgette and Lentil Salad
Heat a large frying pan over med-high heat, add a glug of olive oil and fry your sliced red onion and chopped garlic for 2-3 minutes until soft. Now add your diced courgettes and continue cooking for 4-5 minutes until just about tender. Remove your pan from the heat and season to taste with salt and pepper. Add your lentils and diced tomatoes to the pan and, once your vegetables have cooled, transfer to a medium mixing bowl and reserve to serve.
Step 3 - Red Wine and Cumin Dressing
Whisk together your red wine vinegar, cumin seeds, and honey along with a few good glugs of olive oil to create a spiced dressing for your salad. Always remember to season to taste. A basic guide for dressing is 1 part acid to 3 parts oil.
Step 3 - Pan-Fried Pork Sirloin
Remove your pork sirloin steaks from the marinade and season with salt and pepper. Give your frying pan a quick clean, place it back on the stove over med-high heat and add a good glug of olive oil. When hot, fry your steaks for 4 minutes on each side for a total of 8 minutes or until completely cooked through. Finish by adding your marinade to the pan and immediately remove it from the heat.
To Serve
Add your wild rocket to your courgette and lentil salad, dress with your red wine and cumin dressing and divide amongst your servings. Serve with your pan-fried matador pork steaks. Enjoy!
