Solo: Cajun Pork and Nutty Pesto Potatoes

Spiced pork neck steak with new potato, spinach and pea salad drizzled with a red pesto emulsion

Ingredients to serve 1

  • 1 x Pork Neck Steaks
  • 2.5g x Thyme - leaves pulled from stem, chopped
  • ½ tsp x Cajun Spice
  • 125g x Baby Potatoes - quartered
  • 65g x Peas
  • 15g x Baby Spinach - long or thick stems removed
  • 1 tbsp x Mayonnaise
  • 1 tbsp x Plain Yoghurt
  • ½ tbsp x Red Pesto
  • 1 tbsp x Sunflower Seeds
  • Milk (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C

Washing Instruction

Wash your hands and baby potatoes well. Rinse your baby spinach and thyme thoroughly and drain on paper towel.

Step 1 - Roasted Baby Potato Salad

Place your quartered baby potatoes on an oven tray lined with baking sheet/parchment paper. Drizzle with olive oil and season with salt and pepper. Place in the oven for 20-25 minutes, tossing them halfway through. While your potatoes are roasting, heat a large frying pan over medium-high heat. Add a dash of olive oil and fry your peas for 3-4 minutes until tender. Transfer to a serving dish and set aside till later.

Step 2 - Red Pesto Dressing

Mix your mayonnaise, plain yoghurt, and red pepper pesto in a small mixing bowl. Season lightly with salt and pepper and use a little milk to thin to a dressing consistency.

Step 3 - Cajun Pork Neck

Season your pork neck steak with your cajun spice, salt, and pepper. Drizzle with olive oil and rub with your chopped thyme. Give your frying pan a quick clean and place it back on the stove over medium-high heat. Add a dash of olive oil and fry your steak for 8 minutes (2 minutes on each side). Remove from the pan and transfer to a chopping board.

To Serve

Mix your roasted baby potatoes, sunflower seeds, peas and baby spinach together and serve with your cajun pork neck steak and red pesto dressing.
