Roasted Butternut and Peanut Brittle Salad

Roasted butternut, flaky chicken and green bean couscous with crunchy peanut praline and lemon mustard dressing.




Ingredients to serve 2

  • 150g x Smoked Chicken - flaked/diced
  • 300g x Butternut Chunks
  • 100g x Green Beans - stem end trimmed
  • 50g x Feta - gently crumbled
  • ½ cup x Couscous
  • 40g x Peanut Brittle - chopped into pieces
  • 20g x Rocket - long or thick stems removed
  • ½ x Lemon - zest then halved for juicing
  • 2 tsp x Wholegrain Mustard
  • 1 cup x Boiling Water (from your pantry)
  • Sugar/Sweetener (from your pantry)
  • Boil of Ice Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 300g x Smoked Chicken - flaked/diced
  • 600g x Butternut Chunks
  • 200g x Green Beans - stem end trimmed
  • 100g x Feta - gently crumbled
  • 1 cup x Couscous
  • 80g x Peanut Brittle - chopped into pieces
  • 40g x Rocket - long or thick stems removed
  • 1 x Lemon - zest then halved for juicing
  • 4 tsps x Wholegrain Mustard
  • 2 cups x Boiling Water (from your pantry)
  • Sugar/Sweetener (from your pantry)
  • Boil of Ice Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C. Place a large saucepan of water on the boil for use in Step 2.

Washing Instruction

Wash your hands, green beans and lemon well. Rinse your wild rocket thoroughly and drain on paper towel.

Step 1 - Couscous

Place your couscous and boiling water in a medium mixing bowl, cover with cling film and set aside. The couscous will cook to perfection in about 7-8 minutes.

Step 2 - Roasted Butternut and Blanched Beans

Place your butternut on an oven tray lined with baking sheet/parchment. Drizzle with olive oil and season with salt and pepper. Cover with foil and place in the oven for 12-15 minutes. Remove the foil and continue baking for 12-15 minutes. Once your water comes to the boil, cook your green beans for 6-8 minutes until just about tender. When done, shock them in ice water to stop them from overcooking then drain through a colander.

Step 3 - Fried Chicken

Heat a large frying pan over med-high heat, add a drizzle of olive oil and fry your flaked/diced smoked chicken for 3-4 minutes to warm through.

Step 4 - Mustard Dressing

In a medium mixing bowl; whisk together your lemon juice, wholegrain mustard and a few glugs of olive oil until a dressing has formed. If necessary, balance it with some sugar or sweetener. A simple ratio for a dressing is one part acid to three parts oil.

To Serve

Toss your roasted butternut, green beans, couscous, smoked chicken and wild rocket together in a large mixing bowl. Divide this amongst your servings and top with your crumbled feta and peanut brittle. Enjoy!
