Rosa Tomato Chicken Parmesan

Crispy crumb chicken fillets with gratinated cheese sauce served with pesto mash and roasted grape tomatoes and zucchini.




Ingredients to serve 2

  • 2 x Chicken Breasts
  • 1 ½ cups x Panko Breadcrumbs
  • 2 tsps x Grated Parmesan
  • 100g x Cherry Tomatoes
  • 2 x Courgettes - halved lengthwise and chunked
  • 300g x Potatoes - peeled and quartered
  • 2 tbsps x Basil Pesto
  • 100ml x Tomato Passata
  • 50ml x DD Cheese Sauce
  • 1 x Eggs - whisked (from your pantry)
  • 25g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • All Purpose Flour (from your pantry)
  • Sunflower Oil (from your pantry)

Ingredients to serve 4

  • 4 x Chicken Breasts
  • 3 cups x Panko Breadcrumbs
  • 4 tsps x Grated Parmesan
  • 200g x Cherry Tomatoes
  • 4 x Courgettes - halved lengthwise and chunked
  • 600g x Potatoes - peeled and quartered
  • 4 tbsps x Basil Pesto
  • 200ml x Tomato Passata
  • 100ml x DD Cheese Sauce
  • 2 x Eggs - whisked (from your pantry)
  • 50g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • All Purpose Flour (from your pantry)
  • Sunflower Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C

Washing Instruction

Wash your hands, cherry tomatoes, courgettes and potatoes well.

Step 1 - Basil Mash

Place your potatoes in a medium saucepan of salted water and proceed to boil for 12-15 minutes until soft. Drain through a colander. Mash with a potato masher until smooth, and then fold in your butter and basil pesto. Season to taste with salt and pepper and place in the microwave to keep warm.

Step 2 - Roast Courgette and Cherry Tomatoes

While your potatoes are cooking, place your cherry tomatoes and courgette chunks on an oven tray lined with baking sheet parchment. Drizzle with olive oil and season with salt and pepper. Place in the oven to roast for 8-10 minutes until your cherry tomatoes are soft and your courgettes are tender.

Step 3 - Chicken Parmesan

Season your chicken breasts with salt and pepper. Proceed to coat your chicken breasts in your flour, then your whisked egg and finally in your panko breadcrumbs. Heat a large frying pan over med-high heat, add a shallow layer of sunflower oil and fry your chicken breasts for 3-4 minutes on each side until golden and crisp. Place your chicken breasts on an oven tray and top each with a dollop of your DD Cheese Sauce and a sprinkling of your grated parmesan. Now place in the oven for 2-3 minutes until your sauce is hot and cheese is gooey.

Step 4 - Tomato Passata

Heat your tomato passata in the microwave until hot. Mix your roasted courgettes and cherry tomatoes in the sauce. Taste and season with salt and pepper if necessary.

To Serve

Divide your basil mash amongst your servings, top with your chicken parmesan and serve with your roasted baby marrow and cherry tomatoes. Enjoy!
