Grilled Pork with Garlic and Feta Panzanella

Meaty pork neck steaks with a carrot, corn and tomato panzanella with rosemary focaccia and finished with a creamy feta and garlic dressing.




Ingredients to serve 2

  • 2 x Pork Neck Steaks
  • 1 tsp x Meat Spice
  • 1 x Carrots - shaved with a peeler or julienne peeler
  • ½ tin x Corn Kernels - drained and rinsed
  • 2 x Tomatoes - medium dice
  • 50g x Baby Spinach - long or thick stems removed
  • 1 x Foccacia - medium dice
  • 2 tsp x Garlic - crushed
  • 2.5g x Rosemary - leaves pulled from stem and chopped
  • 50ml x Feta and Garlic Dressing
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 4 x Pork Neck Steaks

  • 100g x Baby Spinach - long or thick stems removed
  • 2 x Foccacia - medium dice
  • 4 tsp x Garlic - crushed
  • 5g x Rosemary - leaves pulled from stem and chopped
  • 100ml x Feta and Garlic Dressing
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 200C.

Washing Instruction

Wash your hands and plum tomatoes well. Rinse your baby spinach and rosemary thoroughly and drain on paper towel.

Step 1 - Focaccia Croutons

Toss your medium dice focaccia in a large mixing bowl with a drizzling of olive oil, your crushed garlic and chopped rosemary. Place on an oven tray in the oven for 6-8 minutes, tossing halfway through, until golden and crisp. Reserve to serve.

Step 2 - Panzanella Base

Give your large mixing bowl a quick clean and add your shaved/julienne carrots, corn kernels, diced tomatoes and baby spinach. Cling film and place in the fridge until you’re ready to serve.

Step 3 - Grilled Pork Neck

Rub your pork neck steaks with your meat spice and pepper, then drizzle with some olive oil. Heat a large grill pan over high heat, once the pan is hot and smoky, fry your pork neck steaks for 2 minutes on each side until they have had 8 minutes cooking time in total and are completely cooked through.

To Serve

Mix your focaccia croutons into your panzanella base, divide your salad amongst your servings and top with your feta and garlic dressing. Serve with your grilled pork neck steaks. Enjoy!
