Sausage and Bell Pepper Pasta

Paprika spiced beef sausage splendor in this easy take on a spaghetti bolognese finished with some flavor elevating sweet basil and caper Verde and snowlike Parmigiano.




Ingredients to serve 2

  • 4 x Beef Sausages
  • 1 tsp x Paprika
  • 150g x Cherry Tomatoes
  • 1 x Red Peppers - core removed and chunked
  • 150g x Spaghetti
  • 5g x Basil - chopped for use - See Step 3
  • 1 tbsp x Capers - chopped
  • 4 tsps x Grated Parmesan
  • 110ml x DD Puttanesca Base
  • Reserved Pasta Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 8 x Beef Sausages
  • 2 tsp x Paprika
  • 300g x Cherry Tomatoes
  • 2 x Red Peppers - core removed and chunked
  • 300g x Spaghetti
  • 10g x Basil - chopped for use - See Step 3
  • 2 tbsps x Capers - chopped
  • 8 tsps x Grated Parmesan
  • 220ml x DD Puttanesca Base
  • Reserved Pasta Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Before you begin, preheat your oven to 220°C

Washing Instruction

Wash your hands, red peppers and cherry tomatoes well. Rinse your basil thoroughly and drain on paper towel.

Step 1 - Spaghetti

Cook your spaghetti in a large saucepan of salted boiling water - 1 tsp salt per litre water. Once done, drain through a colander over a bowl as to your reserve your pasta water for use in Step 3.

Step 2 - Roasted Tomatoes and Smoky Sausages

Scatter your red pepper chunks onto an oven tray and disperse your beef sausages amongst them, drizzle with olive oil and season with your paprika, salt, and pepper. Pop into the oven for 8-10 minutes until just about tender. Proceed to add your cherry tomatoes and capers to your oven tray with a slight drizzle of olive oil and continue roasting and your vegetables and sausages for 6-8 minutes until your vegetables are lightly browned and tender and your sausage is cooked. Once done, allow your sausages to cool and slice them up.

Step 3 - Puttanesca Spaghetti

Heat a large frying pan on the stove over med-high heat, add your Daily Dish Puttanesca Base and about half a cup of your reserved pasta water - the rest can be used in and around the house - bring your sauce to the boil then reduce to a gentle simmer. Your spaghetti should be cooked by now so proceed to add it to your sauce along with your blistered red peppers, cherry tomatoes, and capers. Finish by adding your chopped basil, tasting, and seasoning with salt and pepper.

To serve

Divide your puttanesca spaghetti amongst your servings and serve with your sliced beef sausages and grated parmesan. Enjoy!
