Solo: Bacon and Blushed Tomato Penne

Creamy tomato and crispy bacon penne pasta - alla vodka style




Ingredients to serve 1

  • 75g x Bacon Bits
  • ¼ x Onion - diced
  • ½ clove x Garlic - chopped
  • 20g x Sundried Tomatoes - chopped
  • 75g x Cherry Tomatoes - quartered
  • ¼ cup x Tomato Passata
  • 40ml x Cream
  • 2 tsp x Grated Parmesan
  • 75g x Penne Pasta
  • ¼ cup x Water (from your pantry)
  • Sugar/Sweetener (from your pantry)
  • Sunflower Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Bring a large saucepan of salted water to the boil for use in Step 1.

Washing Instruction

Wash your hands and cherry tomatoes well.

Gino's Tip

A handy tip for chopping garlic is to add a little oil both to your knife and to your garlic. In this way, it won't stick to your knife and shoot all over the place.

Step 1- Penne Pasta

Cook your penne pasta in a large saucepan of salted, boiling water for 10-12 minutes until "al dente". Drain through a colander and set aside till later.

Step 2 - Creamy Tomato Pasta

Heat a large casserole pan over med-high heat. Add a glug of sunflower oil and fry your diced bacon for 3-4 minutes until crisp. Transfer to a serving plate. Using the same pan, add more sunflower oil if necessary, and sweat your onions and garlic for 3-4 minutes. Add your cherry tomatoes, sun-dried tomatoes, sugar, water, and tomato passata. Cook for 5-8 minutes until you have a thick sauce. Taste and season well with salt and pepper. If necessary, add more sugar to balance the tartness. Lastly, add your cream and cook for an additional 2-3 minutes. When done, fold in your penne pasta and crispy bacon.

To Serve

Divide your creamy tomato pasta amongst your servings and finish by sprinkling your parmesan over it. Enjoy!
