Crumbed Pork with Balsamic Greens

Crispy pork fillet medallions with a balsamic dressed tomato, basil and new potato salad.




Ingredients to serve 2

  • 300g x Pork Fillet Medallions
  • 60g x Panko Breadcrumbs
  • 20g x Grated Parmesan
  • 250g x Baby Potatoes - halved
  • 100g x Cherry Tomatoes - quartered
  • ½ x Red Onion - finely diced
  • 30g x Capers - chopped
  • 5g x Parsley - chopped
  • 50g x Baby Spinach - long or thick stems removed
  • 5g x Basil - chopped before serving - See To Serve
  • 75ml x DD Balsamic Glaze
  • 1 x Egg - whisked
  • All Purpose Flour (from your pantry)
  • Sunflower Oil (from your pantry)
  • Olive Oil (from your pantry)
  • salt and pepper (from your pantry)

  • 600g x Pork Fillet Medallions
  • 120g x Panko Breadcrumbs
  • 40g x Grated Parmesan
  • 500g x Baby Potatoes - halved
  • 200g x Cherry Tomatoes - quartered
  • 1 x Red Onion - finely diced
  • 60g x Capers - chopped
  • 10g x Parsley - chopped
  • 100g x Baby Spinach - long or thick stems removed
  • 10g x Basil - chopped before serving - See To Serve
  • 150ml x DD Balsamic Glaze
  • 2 x Egg - whisked
  • All Purpose Flour (from your pantry)
  • Sunflower Oil (from your pantry)
  • Olive Oil (from your pantry)
  • salt and pepper (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items".

Washing Instruction

Wash your hands, baby potatoes and cherry tomatoes well. Rinse your Italian flat parsley, basil and baby spinach thoroughly and drain on paper towel.

Gino's Tip

Prepare three mixing bowls, one with your all-purpose flour, one with your whisked egg and one with your panko breadcrumbs and parmesan. Mix and season the contents of each bowl well.

Step 1- Baby Potatoes and Tomato Salad

Cook your baby potatoes in a large saucepan of salted boiling water for 12-15 minutes. Drain through a colander once done. In the meanwhile, mix your quartered cherry tomatoes, diced red onion, chopped capers (use your discretion when it comes to your kids) and chopped Italian flat-leaf parsley in a large mixing bowl. Season with salt and pepper and set aside until your baby potatoes are cooked. Once your baby potatoes are cooked, gently mix them into your tomato salad mixture.

Step 2 - Balsamic Dressing

Whisk your DD Balsamic Glaze with a few good glugs of olive oil in a small mixing bowl. Taste and season lightly with salt and pepper. A basic guide to making a dressing is 1 part acid (DailyDish Balsamic Glaze) to 3 parts oil.

Step 3 - Crumbed Pork

Season your pork medallions with salt and pepper. Proceed to coat your pork medallions in your flour, then your whisked egg and finally in your panko breadcrumbs and parmesan mixture. Heat a large frying pan over med-high heat, add a shallow layer of sunflower oil and fry your pork medallions for 3-4 minutes on each side until golden and crisp.

To Serve

Add your baby spinach and chopped basil to your tomato salad and dress with your balsamic dressing, divide your salad amongst your servings and serve with your crumbed pork. Enjoy!
