Dukkah Spiced Beef and Carrot Salad

An Egyptian blend of spices, seared onto a prime sirloin steak with baby spinach and pumpkin seed salad.




Ingredients to serve 2

  • 2 x Sirloin Steaks
  • 300g x Sweet Potato Chunks
  • 30ml x Chutney
  • 5g x Coriander - chopped
  • 100g x Cherry Tomatoes - halved
  • 1 x Carrots - shaved with a peeler or julienne peeler
  • 30g x Pumpkin Seeds
  • 50g x Baby Spinach - long or thick stems removed
  • 50ml x Cream
  • 15ml x Lemon Juice
  • 15ml x Honey
  • 10ml x DD Spice Mix - dukkah
  • Milk (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Ingredients to serve 4

  • 4 x Sirloin Steaks
  • 600g x Sweet Potato Chunks
  • 60ml x Chutney
  • 10g x Coriander - chopped
  • 200g x Cherry Tomatoes - halved
  • 2 x Carrots - shaved with a peeler or julienne peeler
  • 60g x Pumpkin Seeds
  • 100g x Baby Spinach - long or thick stems removed
  • 100ml x Cream
  • 30ml x Lemon Juice
  • 30ml x Honey
  • 20ml x DD Spice Mix - dukkah
  • Milk (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items"

Washing Instruction

Wash your hands and cherry tomatoes well. Rinse your coriander and baby spinach thoroughly and drain on paper towel.

Having a colourful plate filled with foods like carrots, spinach, tomatoes etc ensures you are getting a wide variety of nutrients in your meal.

Step 1 - Sweet Potato Mash

Place your chunked sweet potato in a large saucepan and just about cover with salted water. Cook for 12-15 minutes until soft. Drain through a colander and mash with a potato masher until smooth. Proceed to add some milk to loosen your mash - if necessary. Lastly, mix in your chutney and chopped coriander (use your discretion if you're not that into coriander). Season with salt and pepper to taste.

Step 2 - Seedy Salad and Honey Lemon Dressing

Mix your halved cherry tomatoes, julienne carrots, baby spinach and pumpkin seeds in a large mixing bowl. Cover with cling film and set aside till later. Whisk together your cream, lemon juice, and honey with a few good glugs of olive oil in a small mixing bowl. Taste and season with salt and pepper and reserve to serve.

Step 3 - Dukkah Beef

Season your steaks with salt and pepper and rub with your DD Spice Mix. Place a large frying pan over med-high heat. Add a glug of olive oil and once your oil is hot, fry your steaks for 3-4 minutes on each side or until cooked to your desired doneness. Be sure not to move your steaks around too much, In order to get that lovely caramelized color and crisp sesame seeds.

To serve

Dress your seedy salad with your honey lemon dressing and divide amongst your servings. Serve with your sweet potato mash and seared dukkah beef. Enjoy!
