Crispy Crumbed Fish with Sesame Teriyaki Slaw

If I told you were making fish and mash today would you still want in......well your not just making fish and mash you're making Daily Dish, so you will be whipping up this parmesan and five-spiced basa with a tart but creamy cream cheese mash finished with a teriyaki and soy quick Asian slaw.




Ingredients to serve 2

  • 2 x Basa Fillets
  • 125ml x DD Five Spice Crumb
  • 2 x Carrots - shaved with a peeler or julienne peeler
  • 100g x Red Cabbage - finely shredded
  • ½ tbsp x White Sesame Seeds
  • 50ml x Teriyaki
  • 15ml x Lemon Juice
  • 5g x Italian Flat Leaf Parsley - chopped
  • 300g x Potatoes - peeled and quartered
  • 40ml x Cream Cheese
  • 20g x Butter (from your pantry)
  • 1½ x Eggs - whisked (from your pantry)
  • All Purpose Flour
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Ingredients to serve 4

  • 4 x Basa Fillets
  • 250ml x DD Five Spice Crumb
  • 4 x Carrots - shaved with a peeler or julienne peeler
  • 200g x Red Cabbage - finely shredded
  • 1 tbsp x White Sesame Seeds
  • 100ml x Teriyaki
  • 30ml x Lemon Juice
  • 10g x Italian Flat Leaf Parsley - chopped
  • 600g x Potatoes - peeled and quartered
  • 80ml x Cream Cheese
  • 40g x Butter (from your pantry)
  • 3 x Eggs - whisked (from your pantry)
  • All Purpose Flour
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out Take out any "Pantry Items". Prepare three mixing bowls one with your all-purpose flour, one with your whisked egg and one with your DD Five Spice Crumb. Be sure to season the contents of each bowl.

Washing Instruction

Wash your hands, carrots, red cabbage and potatoes well. Rinse your Italian flat-leaf parsley thoroughly and drain on paper towel.

Gino's Tip

For a more decadent smooth mash, you can heat your cream cheese in a medium saucepan, on low heat, with some milk until warm then add your mashed potatoes to your pan and fold it through.

Step 1 - Cheesy Mash - See Gino's Tip

Cook the potatoes in a medium saucepan of salted water for 12-15 minutes until soft and tender. Drain your potatoes through a colander, allow to steam dry for a few minutes then proceed to mash with a potato masher until smooth. Lastly, fold in your cream cheese and season to taste with salt and pepper. Keep warm in the microwave until you're ready to serve.

Step 2 - Sesame Slaw

Mix your julienne carrots, red cabbage, chopped Italian flat-leaf parsley and sesame seeds in a large mixing bowl, cover with cling film until you're ready to serve. Whisk together your teriyaki sauce along with your lemon juice and a few good glugs of olive oil - reserve until your ready to serve, dress your salad as your serving.

Step 3 - Crispy Crumb Fish

Season your basa fillet halves with salt and pepper. Proceed to dust in your all-purpose flour, then your whisked egg and finally in your DD Five Spice Crumbing. Heat a large frying pan over med-high heat and add a shallow layer of sunflower oil. Once your oil is hot, fry your crumbed fish for 3-4 minutes on each side until golden and crisp. Drain excess oil by placing it on paper towel once done.

To serve

Divide your cheesy mash amongst your servings, top with your crispy crumb fish and serve with your sesame slaw. Enjoy!
