Herb Butter Tilapia with Crispy Potatoes

Piccata butter tilapia with oven braised grape tomatoes, green beans, and roasted sweet potato.




Ingredients to serve 2

  • 2 x Tilapia Fillets
  • 250g x Sweet Potato Chunks
  • 100g x Cherry Tomatoes
  • 150g x Green Beans - stem end trimmed
  • 2 x Baby Radish - quartered
  • 5g x Fennel - chopped
  • 30g x Capers - chopped
  • 15g x Garlic - crushed
  • 20g x Butter (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Ingredients to serve 4

  • 4 x Tilapia Fillets
  • 500g x Sweet Potato Chunks
  • 200g x Cherry Tomatoes
  • 300g x Green Beans - stem end trimmed
  • 4 x Baby Radish - quartered
  • 10g x Fennel - chopped
  • 60g x Capers - chopped
  • 30g x Garlic - crushed
  • 40g x Butter (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C

Washing Instruction

Wash your hands, cherry tomatoes, baby radishes, and green beans well. Rinse your fennel thoroughly and drain on paper towel.

Gino's Tip

Frying fish is quite a delicate affair but really simple once you have the hang of it. The main things to keep in mind is nothing will stick to a hot pan and allow your fish to crust - you will notice how browned the edges of your fish becomes - before moving or flipping it....and yes initially your fish will stick to the pan but trust me, don't move it around until it crusts.

Step 1 - Roasted Veggies

Toss your sweet potato chunks in a large mixing bowl along with a drizzle of olive oil and season with salt and pepper. Scatter onto an oven tray and pop into the oven for 15-18 minutes until lightly browned and tender. While your sweet potato is roasting, toss your trimmed green beans, quartered baby radishes and cherry tomatoes in your large mixing bowl with a glug of olive oil, salt, and pepper. Place onto an oven tray and pop into the oven in the last 12 minutes of roasting your sweet potatoes.

Step 2 - Seared Tilapia

While your vegetables are in the oven, season your tilapia fillets with salt and pepper. Heat a large frying pan over med-high heat, once your pan is hot but not smoking - really important - fry your tilapia fillets for 2-3 minutes on each side, flipping them over with a thin egg lifter. Keep your fish warm until you're ready to serve.

Step 3 - Herb Butter

Heat your butter, chopped fennel, chopped capers, and crushed garlic in a bowl in the microwave until liquid - its best to do 5-10 seconds at a time. Season with salt and pepper and reserve to serve.

To serve

Toss your vegetables together once done, divide amongst your servings, top with your tilapia and herb butter. Enjoy!
