Beefy Miso and Greens Rami

Miso and ginger soft braised beef with creamy cauliflower noodles and crispy stir fried red cabbage and baby marrow finished with soft boiled eggs.

Ingredients to serve 2

  • 200g x Beef Mince
  • 100g x Button Mushrooms - quartered/sliced
  • 100g x Red Cabbage - finely shredded
  • 1 x Spring Onion - finely sliced
  • 2 x Courgette - shaved with a peeler, cores chopped
  • 100g x Ramen Noodles
  • 5g x Coriander - chopped
  • 80ml x DD Miso Soup Base
  • 70g x DD Aromatic Base
  • 2 x Eggs (from your pantry)
  • 500ml x Boiling Water (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)

Ingredients to serve 4

  • 400g x Beef Mince
  • 200g x Button Mushrooms - quartered/sliced

  • 4 x Courgette - shaved with a peeler, cores chopped
  • 200g x Ramen Noodles
  • 10g x Coriander - chopped
  • 160ml x DD Miso Soup Base
  • 140g x DD Aromatic Base
  • 4 x Eggs (from your pantry)
  • 1ltr x Boiling Water (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring two medium saucepans of water to the boil for use in Step 1. Mix your beef mince in a large mixing bowl with salt and pepper then proceed to roll into 4-6 meatballs for 2 servings and 8-12 meatballs for 4 servings.

Washing Instruction

Wash your hands, courgette and spring onion well. Rinse your coriander thoroughly and drain on paper towel. Brush your mushrooms with a soft basting brush.

Gino's Tip

For a more decadent smooth mash, you can heat your cream cheese in a medium saucepan, on low heat, with some milk until warm then add your mashed potatoes to your pan and fold it through.

Step 1 - Ramen Noodles and Boiled Eggs - optional

Once your water has come to the boil cook your ramen noodles for 4-5 minutes until tender, drain through a colander and toss lightly with olive oil and reserve to serve. If you just can't live without egg ramen you may proceed to soft boil eggs for the occasion - 4-6 minutes in boiling water, depending on the size of your eggs, is the sweet spot so that you still have a soft center.

Step 2 - Miso Broth

Heat a large casserole pan over a med-high heat, add a drizzle of olive oil and fry your DD Aromatic Base for 2-3 minutes. Proceed to add your DD Miso Soup Base and cook for 1 minute. Add your boiling water and bring your broth to the boil, stirring and mixing your ingredients thoroughly. Add your meatballs to your broth and cook for 6-8 minutes until your meatballs have cooked through - you could sear your meatballs beforehand for 1-2 minutes on a high heat for an extra dimension of caramelized flavor. Remove your meatballs with a slotted spoon onto a serving dish and reserve to serve along with your broth.

Step 3 - Stir Fry Veggies

Heat a large frying pan over med-high heat, add a glug of olive oil and stir fry your button mushrooms for 3-4 minutes before adding your courgette cores and shredded red cabbage, stir fry for a further 1-2 minutes. Remove your pan from the heat and add your finely sliced spring onion and shaved courgette. Taste and season with salt and pepper.

To serve

Divide your noodles amongst your servings, top with your stir fry veggies then pour or ladle over your hot miso broth and top with your fragrant meatballs and chopped coriander - serve with your boiled eggs if you've made them. Enjoy!
