Solo: Blackened Dory with Chickpea and Corn Salsa

This week we're using a southern technique to create a mouthful masterpiece with this blackened john dory and refreshing avo and cilantro dressed grape tomatoes, chickpeas and corn salad.

Ingredients to serve 1

  • 1 x John Dory Fillets
  • 2.5g x DD Blackening Spice
  • ½ tin x Chickpeas - drained and rinsed
  • 75g x Cherry Tomatoes - halved
  • ¼ tin x Corn Kernels - drained and rinsed
  • 40ml x Guacamole
  • 1 tbsp x Mayonnaise
  • 2.5g x Coriander - chopped
  • Milk (from your pantry)
  • Olive Oil (from your pantry)
  • Salt and Pepper (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items"

Washing Instruction

Wash your hands and cherry tomatoes well. Rinse you coriander thoroughly and drain on paper towel.

Gino's Tip

You may also sear your fish until blackened in your pan (about 1 minute each side) and then place onto an oven tray to finish off in the oven - about 4-5 minutes after searing.

Step 1 - Chickpea, Corn Salsa and Avo Dressing

oss your drained chickpeas, halved cherry tomatoes and drained corn in a large mixing bowl. Season with salt and pepper and cling film until you're ready to serve. Whisk together your guacamole, mayonnaise and chopped coriander - thin with milk to dressing consistency and season with salt and pepper to bring out the flavors.

Step 2 - Blackened Dory - See Gino's Tip

Season your john dory fillets with salt and pepper and rub with your DD Blackening Spice. Heat a large frying pan over med-high heat, once your pan is hot, add a drizzle of olive oil and fry your dory fillets for 2-3 minutes on each side until blackened and cooked through.

To serve

Dress your chickpea and corn salsa with your avo dressing, divide amongst your servings and top with your blackened john dory. Enjoy!
