Herby Steak Black Pepper New Potatoes

Herbed steak with bistro styled roasted lentil, cherry tomato and peppered baby potato warm salad.




Ingredients to serve 2

  • 2 x Sirloin Steaks
  • 5g x Coriander - chopped
  • 1 clove x Garlic - chopped
  • 100g x Cherry Tomatoes
  • ½ tin x Lentils - drained and rinsed
  • 50g x Feta - gently crumbled
  • 50g x Baby Spinach - long or thick stems removed
  • 250g x Baby Potatoes - halved
  • 100g x Green Beans - stem end trimmed
  • 30g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Sirloin Steaks
  • 10g x Coriander - chopped
  • 2 cloves x Garlic - chopped
  • 200g x Cherry Tomatoes
  • 1 tin x Lentils - drained and rinsed
  • 100g x Feta - gently crumbled
  • 100g x Baby Spinach - long or thick stems removed
  • 500g x Baby Potatoes - halved
  • 200g x Green Beans - stem end trimmed
  • 60g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C and bring a large saucepan of salted water to the boil - kettle boiled water will speed up the process - for use in Step 3.

Washing Instruction

Wash your hands, cherry tomatoes, baby potatoes, and green beans well. Rinse your baby spinach and coriander thoroughly and drain on paper towel.

Gino's Tip

Whereas muscular cuts of meat such as legs and shoulders require longer cooking times, cuts that don't work as much on an animal must be cooked minimally to preserve their tenderness. So it's best to serve fillet, sirloin, rump, rib eye, etc. underdone. You will find your meat a lot more succulent and tender.

Step 1 - Black Pepper and Cherry Tomato New Potatoes

Place your halved baby potatoes on an oven tray lined with baking sheet/parchment. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 25-30 minutes turning them over halfway through to attain even cooking and browning. In the last 6-8 minutes, add your cherry tomatoes and lentils and continue to roast until the tomatoes have blushed and the lentils have warmed through. Once done, season with more black pepper at your discretion. Set aside till later.

Step 2 - Herby Steak

Heat a large frying pan over med-high heat, add a glug of olive oil and fry your steaks for 3-4 minutes on each side or until cooked to desired doneness. Transfer to your chopping board. Add your chopped garlic and coriander (please use the coriander to your palatable discretion) to the pan along with your butter and warm through until a butter sauce is attained. Season lightly with salt and pepper.

Step 3 - Green Beans

Cook your green beans for 6-8 minutes in your large saucepan of salted water, then drain through a colander, drizzle with olive oil and season with salt and pepper.

To serve

Place your black pepper and cherry tomato new potatoes as your base, sprinkle over your shredded baby spinach, crumbled feta and serve with your green beans, seared steak, and herb butter. Enjoy!
