Garlic and Mustard Butter Pork

A seasonal medley of baby marrow, green beans, pearl onions and blushed tomatoes in warming garlic and herb butter served with pork sirloin steak.




Ingredients to serve 2

  • 2 x Pork Sirloin Steak
  • 3 x Baby Onions - halved, peeled and quartered
  • 100g x Cherry Tomatoes
  • 100g x Green Beans - stem end trimmed
  • 3 x Courgettes - halved lengthwise and chunked
  • 2 tbsps x Oyster Sauce
  • 1 tbsp x Wholegrain Mustard
  • 5g x Garlic - crushed
  • ½ tsp x Dried Rosemary
  • 30g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Pork Sirloin Steak
  • 6 x Baby Onions - halved, peeled and quartered
  • 200g x Cherry Tomatoes
  • 200g x Green Beans - stem end trimmed
  • 6 x Courgettes - halved lengthwise and chunked
  • 4 tbsps x Oyster Sauce
  • 2 tbsps x Wholegrain Mustard
  • 10g x Garlic - crushed
  • 1 tsp x Dried Rosemary
  • 60g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C and bring a large saucepan of salted water to the boil for use in Step 2.

Washing Instruction

Wash your hands, green beans, cherry tomatoes and courgette well.

Blanching your green beans allows you to maintain that lovely bright green color and ensures that you don't lose too much nutritional content.

Step 1 - Roast Baby Onions, Courgette and Cherry Tomatoes

Heat a large frying pan over med-high heat, add a glug of olive oil and brown your chunked courgette for 3-4 minutes. Do them in batches to avoid overcrowding which will result in braised courgette. Transfer each batch to an oven tray lined with baking sheet/parchment. Once all your courgette has been browned, add another glug of olive oil and brown your halved baby onions for 2-3 minutes. Transfer to the oven tray together with your cherry tomatoes. Place your vegetables in the oven to roast for 8-10 minutes. Set aside until later.

Step 2 - Blanched Green Beans

Cook your green beans in a large saucepan of boiling, salted water for 5-6 minutes until tender. Drain through a colander or use a slotted spoon. Once your vegetables have roasted and your beans are cooked, mix them along with your oyster sauce. Season to taste with salt and pepper bearing in mind that your oyster sauce is already salty.

Step 3 - Garlic and Mustard Butter

Heat your butter in the microwave for 10-second intervals, until soft but not liquid. Now mix in your wholegrain mustard, crushed garlic, and rosemary. Season with salt and pepper and reserve till later.

Step 4 - Seared Pork Sirloin

Season your steaks with salt and pepper. Give your large frying pan a quick clean and place it back on the stove over med-high heat. Add a glug of olive oil and fry your pork sirloin steaks for 3-4 minutes on each side until completely cooked through. Transfer to a serving dish and top with your mustard butter while your steaks are still hot.

To serve

Divide your roasted baby onions, courgette, cherry tomatoes and green beans amongst your servings and top with your mustard pork sirloin. Enjoy!
