Solo: Seared Pork, Potatoes and Balsamic Cream

Pan-seared pork sirloin steak with roasted baby potatoes, creamy chard, and hearty mushroom sauce.




Ingredients to serve 1

  • 1 x Pork Sirloin Steak
  • 65g x Button Mushrooms - quartered
  • 150g x Baby Potatoes - quartered
  • 75g x Swiss Chard - shredded
  • ½ tbsp x Balsamic Vinegar
  • 2.5g x Italian Flat Leaf Parsley - chopped
  • 50ml x DD Cheese Sauce
  • Milk (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". preheat your oven to 220°C.

Washing Instruction

Wash your hands and baby potatoes well. Brush your mushrooms with a soft basting brush. Rinse your swiss chard and Italian flat-leaf parsley thoroughly and drain on paper towel.

Flipping your meat with a fork or sharp object is a definite no-no......use an egg lifter or if you really have to, a spoon. In this way you keep those juices locked in and assure a more succulent steak.

Step 1 - Roasted Baby Potatoes

Toss your quartered baby potatoes in a medium mixing bowl along with a good glug of olive oil and season with salt and pepper. Place on an oven tray lined with baking sheet/parchment and roast in the oven for 25-30 minutes. Readily check on your potatoes and turn them once they start to crisp and color.

Step 2 - Wilted Chard

Heat a large frying pan over med-high heat. Add a glug of olive oil and fry your shredded swiss chard in batches until wilted, about 2-3 minutes per batch. Transfer to a serving dish, taste and season with salt and pepper.

Step 3 - Pork Sirloin with Mushroom and Balsamic Sauce

Season your steaks with salt and pepper. Give your large frying pan a quick clean and place it back on the stove over med-high heat. Add a glug of olive oil and fry your steaks for 3-4 minutes on each side or until completely cooked through. Transfer to a serving dish once done. Fry your quartered button mushrooms in the same pan for 3-4 minutes. Now add your balsamic vinegar and your DD Cheese Sauce. Allow the sauce to cook and warm through - thin with some milk if your sauce thickens too much. Taste, season with salt and pepper and finish with your chopped Italian flat-leaf parsley.

To serve

Divide your roast potatoes and wilted chard amongst your servings. Serve with your pork sirloin steaks with mushroom and balsamic sauce. Enjoy!
