Moroccan Kofta

Sweet spiced Moroccan cumin and relish beefy kofta's with crisp bell pepper and tomato slaw, nutty couscous and yoghurt and feta sauce.




Ingredients to serve 2

  • 250g x Beef Mince
  • ½ tsp x Cumin Ground
  • 1 tbsp x Chutney
  • 100g x Couscous
  • 100g x Red Cabbage - finely shredded
  • 1 x Green Pepper - core removed and diced
  • 1 x Tomatoes - medium dice
  • ½ x Cucumber - diced
  • 60ml x DD Feta Sauce
  • 25ml x DD Honey and Lemon Dressing
  • ½ x Eggs - whisked (from your pantry)
  • 1 cup x Boiling Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 500g x Beef Mince
  • 1 tsp x Cumin Ground
  • 2 tbsps x Chutney
  • 200g x Couscous
  • 200g x Red Cabbage - finely shredded
  • 2 x Green Pepper - core removed and diced
  • 2 x Tomatoes - medium dice
  • 1 x Cucumber - diced
  • 120ml x DD Feta Sauce
  • 50ml x DD Honey and Lemon Dressing
  • 1 x Eggs - whisked (from your pantry)
  • 2 cups x Boiling Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". preheat your oven to 220°C.

Washing Instruction

Wash your hands, red cabbage, green peppers, english tomatoes and cucumber well.

It's always best practice to season your meatball mixture before cooking so that you develop flavor throughout the meatball, not just on the surface.

Step 1 - Beef Koftas

Mix your beef mince, egg, cumin and chutney in a large mixing bowl. Season with salt and pepper and roll your mix into 6-8 balls for 2 servings and 12-16 balls for 4 servings (roughly 30g each ball). Place on an oven tray and roast in the oven for 7-9 minutes until your kofta balls are cooked.

Step 2 - Couscous and Bell Pepper Slaw

Place your couscous and boiling water in a medium mixing bowl, mix in a seasoning of salt and pepper, cover with cling film and set aside. The couscous will cook to perfection in about 7-8 minutes. In the meantime mix your shredded red cabbage, diced green peppers, diced English tomatoes and diced cucumber in a large mixing bowl. Cling film and set aside until you're ready to serve.

Step 3 - Honey and Lemon Dressing

Whisk your DD Honey and Lemon Dressing along with a few good glugs of olive oil, taste and season with salt and pepper. Reserve to serve.

To serve

Once all your components are ready. Dress your bell pepper slaw in your honey and lemon dressing and taste for seasoning - a good seasoning brings out more flavor from raw vegetables. Place your couscous as your base, top with your beef koftas, bell pepper slaw and dollops of DD Feta Sauce. Enjoy!
