Solo: Turkish Chicken and Orange Salad

Eurasian spiced chicken on couscous, carrot, chickpea, and citrus salad with a tangy lemon and sweet chili dressing.

Ingredients to serve 1

  • 1 x Chicken Breast
  • 50g x Couscous
  • 25g x Feta - gently crumbled
  • ¼ x Red Onion - thinly sliced
  • 1 x Carrot - shaved with a peeler or julienne peeler
  • ¼ tin x Chickpeas - drained and rinsed
  • 2.5g x Mint - chopped - See Gino's Tip
  • 5g x Ginger Paste
  • 15g x Cranberries
  • ½ x Orange - peeled and segmented
  • 1.5g x DD Spice Mix - turkish
  • 25ml x DD Lemon and Sweet Chilli
  • ½ cup x Boiling Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • Cling film (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Boil the kettle for use in Step 1.

Washing Instruction

Wash your hands and carrots well. Rinse your mint thoroughly and drain on paper towel.

Gino's Tip

To prevent your mint from browning, chop it just before you add it to your salad.

Step 1 - Couscous, Carrot and Chickpea Salad

Place your couscous and boiling water in a medium mixing bowl, cover with cling wrap, and set aside. The couscous will cook to perfection in about 7-8 minutes. When soft and cooked, fluff and loosen the grains with a fork. Set aside till later. In a large mixing bowl combine your finely sliced red onion, julienne carrots, chickpeas, grated ginger, cranberries, and orange segments. Drizzle with a little olive oil, cover with cling wrap, and set aside till later.

Step 2 - Sweet Chilli Dressing

Using a small mixing bowl, whisk your DailyDish Lemon and Sweet Chilli with a few dashes of olive oil. Season lightly with salt and pepper.

Step 3 - Turkish Chicken

Season your chicken breast with your DailyDish Turkish Spice Mix, salt, and pepper. Heat a large frying pan over medium-high heat, add a dash of olive oil and fry your chicken for 3-4 minutes on each side. If underdone, cook for 1-2 minutes longer on each side, but flattened breasts usually cook really quickly.

To serve

Place your couscous on your plate. Dress your carrot and chickpea salad with your sweet chilli dressing and place this on top of your couscous. Finish with your crumbled feta and chopped mint. Serve with your Turkish chicken. Enjoy!
