Smoky Paprika Dory with Broccoli Bravas

A play on a Spanish tapas with our red crumb john dory, roasted baby potatoes with steamed broccoli, red sauce and garlic mayonnaise.




Ingredients to serve 2

  • 300g x Basa Fillets - half each fillet
  • 130ml x DD Smokey Red Crumb
  • 100ml x DD Red Sauce
  • 300g x Baby Potatoes - halved
  • 200g x Broccoli - cut into florets
  • 3 tbsps x Mayonnaise
  • 10g x Garlic - crushed
  • 5g x Italian Flat Leaf Parsley - chopped
  • 1 x Eggs - whisked (from your pantry)
  • Salt and Pepper (from your pantry)
  • Sunflower Oil (from your pantry)
  • Olive Oil (from your pantry)
  • All Purpose Flour (from your pantry)

Ingredients to serve 4

  • 600g x Basa Fillets - half each fillet
  • 260ml x DD Smokey Red Crumb
  • 200ml x DD Red Sauce
  • 600g x Baby Potatoes - halved
  • 400g x Broccoli - cut into florets
  • 6 tbsps x Mayonnaise
  • 20g x Garlic - crushed
  • 10g x Italian Flat Leaf Parsley - chopped
  • 2 x Eggs - whisked (from your pantry)
  • Salt and Pepper (from your pantry)
  • Sunflower Oil (from your pantry)
  • Olive Oil (from your pantry)
  • All Purpose Flour (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". prepare three mixing bowls one with your all-purpose flour, one with your whisked egg and one with your DD Smokey Red Crumb. Be sure to season the contents of each bowl. Bring a large saucepan of salted water to the boil for use in Step 2. Whisk together your mayonnaise, garlic and Italian flat-leaf parsley.

Washing Instruction

Wash your hands, baby potatoes, and broccoli well. Rinse your Italian flat-leaf parsley thoroughly and drain on paper towel.

Gino's Tip

Try not to overcook your broccoli you will notice it will become less effervescent in color and goes to mush. Cooking it al dente preserve its nutritional value and texture. If you have a steamer you can steam your broccoli maximizing your nutritional gain.

Step 1 - Roasted Baby Potatoes and Red Sauce

Toss your baby potato halves in a large mixing bowl with a drizzling of olive oil, salt, and pepper. Scatter onto an oven tray and pop into the oven for 25-30 minutes until crisp and cooked through. Place your DD Red Sauce in a medium saucepan on a low heat to warm through for serving or you can heat it up in the microwave - be sure to season to taste.

Step 2 - Blanched Broccoli

Once your water comes to the boil, cook your broccoli for 4-5 minutes until just about cooked - be advised it will carry over cook while your fry your fish, as you won't be shocking it in ice water. Drain through a colander and season with salt and pepper to taste.

Step 3 - Crispy Crumb Red Fish

Season your halved basa fillets with salt and pepper. Proceed to dust in your all-purpose flour, then your whisked egg and finally in your DD Smoky Red Crumb. Heat a large frying pan over med-high heat and add a shallow layer of sunflower oil. Once your oil is hot, fry your crumbed fish for 3-4 minutes on each side until golden and crisp. Drain excess oil by placing it on paper towel once done

To serve

Divide your roasted baby potatoes amongst your servings, drizzle over your DD Red Sauce, top with your blanched broccoli, crispy crumb red fish and dollops of your garlic and herb mayonnaise. Enjoy!
