Solo: Greek Flatbreads with Mascarpone

Crispy naan bread with mascarpone, topped with roasted Mediterranean veggies and flaked smoked chicken. Drizzled with balsamic glaze.




Ingredients to serve 1

  • 100g x Smoked Chicken - flaked
  • 50g x Green Beans - stem end trimmed
  • ½ x Aubergine - stem trimmed, sliced into 0.5-1cm discs
  • 2 x Baby Marrows - stem ends trimmed,sliced lengthwise
  • 50g x Cherry Tomatoes
  • 30ml x Mascarpone
  • 1 x Garlic Naan Bread
  • 37.5ml x DD Balsamic Glaze
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)
  • Paper Towels (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C and place a medium saucepan of salted water on the stove, covered with a lid, over high heat to come to the boil for use in Step 2.

Washing Instruction

Wash your hands, green beans, aubergine, baby marrows and cherry tomatoes well.

Gino's Tip

Alternatively, you could use a microwavable steamer to cook your green beans. Remember they will cook way more quickly - closer to 4-6 minutes.

Step 1 - Roasted or Pan Blistered Cherry Tomatoes

Place your cherry tomatoes on an oven tray, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 6-8 minutes until the skins have just about blistered. Alternatively, you could heat a frying pan until smoking, then with a drizzling of olive oil blister your cherry tomatoes for 3-4 minutes, seasoning with salt and pepper once done.

Step 2 - Blanched Beans - See Gino's Tip

Cook your green beans in a medium saucepan of salted boiling water for 6-8 minutes until just about tender - refrain from cooking with a lid - as it causes your greens to brown. Drain through a colander, season with salt and pepper, and reserve to serve.

Step 3 - Pan-Fried Aubergine and Baby Marrow

Heat a large frying pan over medium-high heat and add a few good dashes of olive oil. Once the oil is hot, fry your aubergine slices for 1-2 minutes on each side until nicely charred and cooked. Drain on a paper towel. When done, give your frying pan a quick wipe and proceed to fry your baby marrow slices for 2 minutes on each side until charred and cooked. Drain on a paper towel. Season your vegetables with salt and pepper.

Step 4 - Toasted Naan

Place your garlic naan bread in the oven or toast in a pan before serving.

Step 5 - Assembling your Greek Flatbread

Spread your naan bread with your mascarpone cheese and your roasted cherry tomatoes, pan-fried aubergine, blanched beans, and baby marrows. Top with your smoked chicken and drizzle over your DailyDish Balsamic Glaze.

To serve

Place your Greek flatbread on your plate. Enjoy!
