Solo: Greek Flatbreads with Mascarpone

Crispy naan bread spread with mascarpone topped with roasted med veg and flaked smoked chicken finished with balsamic glaze.




Ingredients to serve 1

  • 100g x Smoked Chicken - flaked
  • 50g x Green Beans - stem end trimmed
  • ½ x Aubergine - stem trimmed, sliced into 0.5-1cm discs
  • 2 x Courgette - stem ends trimmed,sliced lengthwise
  • 50g x Cherry Tomatoes
  • 30ml x Mascarpone
  • 1 x Garlic Naan Breads
  • 30ml x DD Balsamic Glaze
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C and place a medium saucepan of salted water on the stove, covered with a lid, over high heat to come to the boil for use in Step 2.

Washing Instruction

Wash your hands, green beans, aubergine, courgette and cherry tomatoes well.

Gino's Tip

Alternatively, you could use a microwavable steamer to cook your green beans. Remember they will cook way more quickly - closer to 4-6 minutes.

Step 1 - Roasted Cherry Tomatoes

Place your cherry tomatoes on an oven tray, drizzle with olive oil and season with salt and pepper. Roast in the oven for 6-8 minutes until the skins have just about blistered.

Step 2 - Blanched Beans - See Gino's Tip

Cook your green beans in a medium saucepan of salted, boiling water for 6-8 minutes until just about tender - refrain from cooking with lid - as it causes your greens to brown. Drain through a colander, season with salt and pepper and reserve to serve.

Step 3 - Pan-Fried Aubergine and Courgette

Heat a large frying pan over med-high heat and add a good few glugs of olive oil. Once the oil is hot, fry your aubergine slices for 1-2 minutes on each side until nicely charred and cooked. Drain on paper towel. When done, give your frying pan a quick wipe and proceed to fry your courgette slices for 2 minutes on each side until charred and cooked. Drain on paper towel. Season your vegetables with salt and pepper.

Step 4 - Toasted Naan

Place your garlic naan bread's in the oven to warm through and toast slightly.

Step 5 - Assembling your Greek Flatbreads

Spread your naan bread's with your mascarpone cheese and divide your roasted cherry tomatoes, pan-fried aubergine, blanched beans and courgette amongst them. Top with your smoked chicken and drizzle over your DD Balsamic Glaze.

To serve

Divide your Greek flatbreads amongst your servings. Enjoy!
