Gino's Tip
Al Dente - describes pasta or rice that is cooked to be firm to the bite. The etymology is Italian "to the tooth". In contemporary Italian cooking, the term identifies the ideal consistency for pasta and involves a brief cooking time.
Step 1 - Creamy Pasta Base
Heat a large casserole pan over med-high heat, add a drizzle of olive oil and your chopped garlic, origanum and smoked chicken.
Cook for 2-3 minutes until heated through, now add your peas and swiss chard with a dash of water.
Cover with a lid and cook for 1-2 minutes until heated through.
Turn your heat to medium and add cream, cream cheese, harissa paste, and tomato passata.
Stir your sauce and cook until heated through - you may thin your pasta base with a dash of milk.
Taste and season, if need be with salt and pepper
Step 2 - Sweet Potato Gnocchi
Once your large saucepan of water has come to the boil, cook your sweet potato gnocchi for 2-3 minutes until they float.
See packaging instructions for the cooking method.
Drain through a colander and gently fold into your creamy pasta base.
