Blackened Chicken and Tuscan Bean Salad

A tantalizing trip to Tuscany in all its alfresco delights.....try our spiced blackened chicken with a legume, sundried tomato, and balsamic arugula salad.




Ingredients to serve 2

  • 2 x Chicken Breast
  • ½ x Cauliflower - cut into florets
  • ½ x Red Chilli - halved, seeds removed and chopped
  • 15g x Grated Parmesan
  • ½ x Red Onion - thinly sliced
  • ½ tin x Cannellini Beans - drained and rinsed
  • 40g x Sundried Tomatoes - chopped
  • 50g x Black Pitted Olives - halved
  • 20g x Wild Rocket - long or thick stems removed
  • 4 tbsps x Balsamic Vinegar
  • 5g x DD Spice Mix - blackened chicken
  • 25g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Chicken Breast
  • 1 x Cauliflower - cut into florets
  • 1 x Red Chilli - halved, seeds removed and chopped
  • 30g x Grated Parmesan
  • 1 x Red Onion - thinly sliced
  • 1 tin x Cannellini Beans - drained and rinsed
  • 80g x Sundried Tomatoes - chopped
  • 100g x Black Pitted Olives - halved
  • 40g x Wild Rocket - long or thick stems removed
  • 8 tbsps x Balsamic Vinegar
  • 10g x DD Spice Mix - blackened chicken
  • 50g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Bring a large saucepan of salted water to the boil for use in Step 1.

Washing Instruction

Wash your hands and red chilli well. Rinse your wild rocket thoroughly and drain on paper towel.

Gino's Tip

Place your sundried tomatoes in a small mixing bowl and cover with boiling water. Wrap the bowl in clingfilm and allow the tomatoes to soften. This will take about 4-5 minutes. Drain through a colander, squeeze out any excess water and chop roughly.

Step 1 - Chilli Cauli Crush

Cook your cauliflower florets in the large saucepan of boiling, salted water for 8-10 minutes until soft. Drain through a colander once done and transfer to a flat-based bowl. Add your butter and chopped chili (use at your discretion) and roughly mash with a potato masher. Finish by mixing in your grated parmesan and seasoning with salt and pepper to your liking.

Step 2 - Tuscan Bean Salad

Mix your sliced red onion, cannellini beans, hydrated chopped sundried tomatoes and halved black olives in a medium mixing bowl. Add your balsamic vinegar and a good few glugs of olive oil to make a dressing. Taste and season with salt and pepper. If you find you need a touch of sweetness to balance your salad; use a natural sweetener if you have any on hand. Set your salad aside till later.

Step 3 - Blackened Chicken

Season your chicken breasts with salt and pepper as well as your DD Spice Mix. Heat a large frying pan over med-high heat and add a glug of olive oil. Once the oil is hot, fry the breasts for 2 minutes on each side until they've had 6-8 minutes cooking time in total. They should be nicely charred and cooked through. When done, remove your pan from the heat.

To serve

Mix your wild rocket into your Tuscan bean salad and divide it amongst your servings. Place your chili cauli crush as your base and top with your blackened chicken, whole or sliced. Enjoy!
