Coronation Chicken Pasta Salad

Curried apricot and chicken penne salad with oven-roasted baby marrow, fresh English spinach, and peppadews.

Ingredients to serve 2

  • 250g x Smoked Chicken - flaked
  • ½ x Onion - thinly sliced
  • 10g x Garlic - crushed
  • 1 tsp x Curry Powder
  • 125g x Penne Pasta
  • 40g x Turkish Apricots - chopped
  • 3 x Courgettes - halved lengthwise and chunked
  • 20g x Baby Spinach - long or thick stems removed
  • 25g x Peppadews - chopped
  • 5g x Chives - chopped
  • 115ml x DD Coronation Base
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 500g x Smoked Chicken - flaked
  • 1 x Onion - thinly sliced
  • 20g x Garlic - crushed
  • 2 tsps x Curry Powder
  • 250g x Penne Pasta
  • 80g x Turkish Apricots - chopped
  • 6 x Courgettes - halved lengthwise and chunked
  • 40g x Baby Spinach - long or thick stems removed
  • 50g x Peppadews - chopped
  • 10g x Chives - chopped
  • 230ml x DD Coronation Base
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C and bring a large saucepan of salted water to the boil for use in Step 1.

Washing Instruction

Wash your hands and courgette well. Rinse your baby spinach and chives thoroughly and drain on paper towel.

Gino's Tip

Normally bright yellow, coronation chicken is usually flavored with curry powder or paste, although more sophisticated versions of the recipe are made using fresh herbs and spices and additional ingredients such as flaked almonds, raisins, and crème fraîche.

Step 1 - Penne Pasta and Roasted Courgette

Place your chunked courgette on an oven tray, drizzle with olive oil and season with salt and pepper. Place into the oven to roast for 8-10 minutes until lightly browned and tender. While your courgettes are roasting, cook your penne pasta in your boiling water for 10-12 minutes. Drain through a colander and transfer to a large mixing bowl.

Step 2 - Coronation Chicken Salad

Heat large casserole pan over med-high heat, add a glug of olive oil and sweat your sliced onions and crushed garlic for 4-5 minutes. Proceed to add your flaked/diced smoked chicken, Turkish apricots, peppadews, and curry powder. Cook for 1-2 minutes stirring continuously so your spice doesn't catch. Remove your pan from the heat and transfer your mixture to your penne pasta bowl. Proceed to mix in your DD Coronation Base and chopped chives, be sure to taste, then season with salt and pepper to your liking. Finish by mixing in your roasted courgettes and your baby spinach.

To serve

Divide your coronation chicken pasta salad amongst your servings. Enjoy!
