Chilli Prawn Spaghetti

A summery seafood affair, simplistic and tasty, chili and garlic prawns in a smokey tomato base with sauce hugging spaghetti and fresh herbs.




Ingredients to serve 2

  • 250g x Prawns - shelled or left whole
  • 1 clove x Garlic - chopped
  • ½ x Chilli - halved lengthwise, de-seeded, chopped
  • 200g x Cherry Tomatoes - halved
  • 5g x Italian Flat Leaf Parsley - chopped
  • 150g x Spaghetti
  • ⅛ cup x Tomato Passata
  • 100ml x DD Louisiana Base
  • 10g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 500g x Prawns - shelled or left whole
  • 2 cloves x Garlic - chopped
  • 1 x Chilli - halved lengthwise, de-seeded, chopped
  • 400g x Cherry Tomatoes - halved
  • 10g x Italian Flat Leaf Parsley - chopped
  • 300g x Spaghetti
  • ¼ cup x Tomato Passata
  • 200ml x DD Louisiana Base
  • 20g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Bring a large saucepan of salted water to the boil for use in Step 1.

Washing Instruction

Wash your hands, chili and cherry tomatoes well. Rinse your Italian flat-leaf parsley thoroughly and drain on paper towel.

Gino's Tip

This recipe is a rendition of Spaghetti Aglio e olio which is a traditional Italian pasta dish from Naples made by lightly sauteeing sliced, minced, or pressed garlic in olive oil, sometimes with the addition of dried or fresh red chili, and tossing with spaghetti.

Step 1 - Spaghetti

Once your water in your large saucepan has come to the boil, cook your spaghetti for 10-12 minutes until just about cooked or "al dente". Drain through a colander and reserve for later.

Step 2 - Red Prawn Pasta Base

Season your prawns with salt and pepper Heat a large casserole pan over med-high heat, add a drizzling of olive oil and fry your chopped garlic and chili (as much or as little as you wish) for 1-2 minutes. Now add your prawns and halved cherry tomatoes and cook for 2-3 minutes until pink and just about cooked through. Proceed to add your DD Louisiana Base and cook for 1 minute before adding your tomato puree. Taste and season if need be with salt and pepper then mix through your chopped parsley and cooked spaghetti.

To serve

Divide your chilli prawns spaghetti amongst your servings. Enjoy!
