Method
Before You Begin
Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220C.
Washing Instruction
Wash your hands, tenderstem broccoli, carrots and baby potatoes well.
Gino's Tip
Kimchi, a staple in Korean cuisine, is a famous traditional side dish of salted and fermented vegetables, such as napa cabbage and Korean radish, made with a widely varying selection of seasonings including gochujang, spring onions, garlic, ginger, and jeotgal, etc. This version we are using its paste or liquid form.
Step 1 - Roasted Potatoes and Broccolini
Toss your baby potato halves in a large mixing bowl with a drizzling of olive oil, salt, and pepper.
Scatter onto an oven tray and pop into the oven for 25-30 minutes.
Do the same with your tender stem broccoli and pop them into the oven for 10-12 minutes until lightly browned and tender - for the last 2-3 minutes sprinkle over your grated mozzarella.
Step 2 - Kimchi Smoer
Heat a medium casserole pan over med-high heat, add some olive oil and once your pan is warm proceed to soften your thinly sliced onions and shaved carrots for about 6-8 minutes.
Proceed to mix through your tomato passata, kimchi (use at your discretion as it is spicy) and soya sauce then proceed to cook for 3-4 minutes stirring at regular intervals.
Once done taste and season with salt and pepper.
To serve
Place your portuguese roll bottoms on each plate top with your roasted tenderstem broccoli and kimchi smoer, serve alongside your roasted baby potatoes. Enjoy!
