Crunchy Roast Summer Roots

Dinner literally and figuratively chop, chop. This roasted sweet butternut, feta, pecan, and red cabbage tahini salad is all the trend until year-end.




Ingredients to serve 2

  • 300g x Butternut Chunks
  • 100g x Red Cabbage - chunked/chopped roughly
  • 1 tin x Chickpeas - drained and rinsed
  • 1 x Apple - quartered core removed then sliced/chunked
  • 5ml x Paprika
  • 1 x Feta - gently crumbled
  • 40g x Pecan Nuts - chopped roughly
  • 80ml x DD Tahini Dressing
  • Milk (from your pantry)
  • Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 600g x Butternut Chunks
  • 200g x Red Cabbage - chunked/chopped roughly
  • 2 tins x Chickpeas - drained and rinsed
  • 2 x Apple - quartered core removed then sliced/chunked
  • 10ml x Paprika
  • 2 x Feta - gently crumbled
  • 80g x Pecan Nuts - chopped roughly
  • 160ml x DD Tahini Dressing
  • Milk (from your pantry)
  • Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220C.

Washing Instruction

Wash your hands, red cabbage and apple well.

Gino's Tip

Thin your dressing slightly if need be by whisking along with some water or milk if it seems slightly too thick. Season to taste with salt and pepper.

Step 1 - Oven Baked Butternut and Legumes

Toss your butternut chunks, red cabbage chunks and drained chickpeas in a large mixing bowl along with a drizzling of olive oil, your paprika, salt, and pepper. Scatter onto an oven tray, cover with foil and roast for 15 minutes. Remover your foil after 15 minutes then add your pecan nuts and continue roasting for 12-15 minutes until all your vegetables are lightly browned and tender.

Mix your sliced/chunked apple into your roasted vegetables, thin your DailyDish Tahini Dressing slightly if need be by whisking along with some water or milk. Divide your crunchy roast summer roots salad amongst your servings and top with your crumbled feta. Enjoy!
