Method
Before You Begin
Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C.

Wash your hands and broccoli well.

Try to get your chicken and broccoli onto a tray and then once your rice is halfway cooked place it in the oven, in this way everything will be done at the same time.
Step 1 -Roasted Cajun Chicken and Greens - See Gino's Tip
Season your chicken breast with salt and pepper and rub with your cajun spice. Toss your broccoli in a large mixing bowl with a drizzling of olive oil, salt, and pepper. Heat a large casserole pan over med-high heat once your pan is hot but not smoking; add a drizzling of olive oil and sear your chicken breast on one side for 3-4 minutes until well browned. Place onto an oven tray along with your broccoli; pop into the oven for 15-18 minutes until your chicken is cooked through and your broccoli is tender and lightly browned.
Step 2 - Cheddar Rice
Heat a medium saucepan over med-high heat, add a drizzling of olive oil and fry your diced onion and chopped garlic for 2-3 minutes. Now add your jasmine rice and cook until your rice is slightly toasted. Proceed to stir through your cream cheese and water, and transfer to a baking dish preferably with a lid (or cover with foil) and pop into the oven 15-18 minutes until soft and cooked. Before serving mix through your grated white cheddar.
To serve
Divide your cheddar rice, roasted cajun chicken and greens amongst your servings. Enjoy!
