Crumbed Prawns Savory Spiced Rice

Crispy crumbed nutty prawns with a Cape Malay mushroom and pea rice served with a dressed tomato salad.

Ingredients to serve 2

  • 250g x Prawns - shelled
  • 130g x DD Crumbing
  • 50g x Diced Onion
  • 10g x Garlic - crushed
  • 10g x Ginger Paste
  • 100g x Button Mushrooms - quartered
  • 100g x Peas
  • 80g x Basmati Rice
  • 100g x Cherry Tomatoes - quartered
  • 20ml x Red Wine Vinegar
  • 5g x DD Spice Mix - biryani
  • 1 x Eggs - whisked (from your pantry)
  • All Purpose Flour (from your pantry)
  • Sugar/Sweetener (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 500g x Prawns - shelled
  • 260g x DD Crumbing
  • 100g x Diced Onion
  • 20g x Garlic - crushed
  • 20g x Ginger Paste
  • 200g x Button Mushrooms - quartered
  • 200g x Peas
  • 160g x Basmati Rice
  • 200g x Cherry Tomatoes - quartered
  • 40ml x Red Wine Vinegar
  • 10g x DD Spice Mix - biryani
  • 2 x Eggs - whisked (from your pantry)
  • All Purpose Flour (from your pantry)
  • Sugar/Sweetener (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Prepare three mixing bowls, one with your all-purpose flour, one with your whisked egg and one with your DailyDish Crumbing - season the contents of each bowl. Bring a medium saucepan of water to the boil for use in Step 1.

Washing Instruction

Wash your hands and cherry tomatoes well. Brush your button mushrooms with a soft basting brush or wipe with a clean kitchen towel.

Gino's Tip

You will notice that your prawns begin to curl up as they are cooking once they are entirely curled up is an indication that they are done cooking. Also, be sure to regulate your heat, if your prawns are browning to quickly reduce your heat slightly, you can always turn the heat up again.

Step 1 - Basmati Rice

As soon as the water in your medium saucepan boils add your basmati rice, give the rice a good stir. Once the water comes back to the boil, stir your rice once more, reduce the heat to a simmer and cook for 8-10 minutes. Drain through a colander and set aside till later.

Step 2 - Tomato Sambal

Mix your quartered cherry tomatoes in a medium mixing bowl along with your red wine vinegar, a few glugs of olive oil, a bit of sugar/sweetener to balance and a seasoning of salt and pepper. Reserve to serve.

Step 3 - Cheats Biryani

Heat a large casserole pan over med-high heat, add a glug of olive oil and fry your quartered button mushrooms for 3-4 minutes until well browned and cooked. Transfer to a serving dish once done. In the same pan sweat off your diced onions, crushed garlic and ginger paste until soft and translucent, about 4-5 minutes. Proceed to add your butter, lentils and cook for 1-2 minutes. Return your button mushrooms to the pan and add your DailyDish Spice Mix. Heat through for 1 minute. Season with salt and pepper to taste and remove your pan from the heat until your rice is cooked - with curries you wouldn't generally season with pepper, but as this is a mild Malay savory rice dish you can use pepper to balance your flavors. Once your rice has cooked, return your casserole pan to the heat, mix your rice into your cheat's biryani mixture, taste once more and balance with salt and pepper if need be.

Step 4 - Crispy Prawns - See Gino's Tip

Once your rice is done, begin to coat your prawns in your all-purpose flour, dusting off any excess, then into your whisked egg and finally in your crumbing. Heat a large frying pan over med-high heat, add a shallow layer of sunflower oil and once your oil is hot fry your prawns until crisp, about 3-4 minutes working in batches.

To serve

Divide your cheats biryani amongst your servings top with your crispy prawns and tomato sambal. Enjoy!
