Tuscan Beef Burgers

Sweet Roast Onion and Pesto Aioli Rump Burgers on a sesame seed bun with vegetable spiced wedges.

Ingredients to serve 2

  • 2 x Rump Burgers
  • 1 x Onion - cut into rings
  • 10g x Crispy Onions
  • 50g x Diced Bacon
  • 60ml x Mayonnaise
  • 15ml x Basil Pesto
  • 1 x Plum Tomatoes - sliced
  • 25g x Lettuce
  • 2 x Sesame Seed Hamburger Roll
  • 300g x Potatoes - cut into wedges or fries
  • 2.5ml x Vegetable Spice
  • Butter - room temperature (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Rump Burgers
  • 2 x Onion - cut into rings
  • 20g x Crispy Onions
  • 100g x Diced Bacon
  • 120ml x Mayonnaise
  • 30ml x Basil Pesto
  • 2 x Plum Tomatoes - sliced
  • 50g x Lettuce
  • 4 x Sesame Seed Hamburger Roll
  • 600g x Potatoes - cut into wedges or fries
  • 5ml x Vegetable Spice
  • Butter - room temperature (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C. Whisk your mayonnaise along with your basil pesto and reserve to serve.

Washing Instruction

Wash your hands, plum tomatoes, and potatoes well. Rinse your lettuce thoroughly and drain on paper towel.

Gino's Tip

When roasting wedges or potato fries, make sure you use a decent amount of olive oil so that your potatoes crisp and allow the potatoes to crust first before moving them around. Therefore it's better to wait until the halfway point or three-quarter way into cooking before your turn or attempt to turn your wedges or fries.

Step 1 - Roast Crispy Onions and Bacon

Flat pack your onion rings onto an oven tray, drizzle with olive oil, salt and pepper. Sprinkle over your diced bacon and proceed to place in the oven to roast for 10-12 minutes until your onion rings are well browned and softened and your bacon is cooked. Toss your potato wedges or fries in a large mixing bowl along with a drizzling of olive oil, salt, and pepper. Scatter onto an oven tray and pop into the oven for 25-30 minutes until crispy and cooked through. Once your onions are done roasting sprinkle over your crispy onions and reserve to serve.

Step 2 - Rump Burgers

Season your rump burgers with salt and pepper. Heat a large frying pan over med-high heat, add a few glugs of olive oil. once your pan is hot but not smoking, fry your burgers for 4-5 minutes on each side or cooked to your desired doneness - this could be more or less time on the heat.

Step 3 - Toasted Rolls - optional

Butter your halved sesame rolls. You can either pop them into the oven to toast while your potatoes are roasting or pan-fry them for 1-2 minutes per side until toasted.

To serve

Divide your sesame seed roll bottoms amongst your servings, top with your lettuce, basil pesto mayonnaise, sliced plum tomatoes, rump burgers, roast crispy onion and bacon, and your sesame seed roll tops. Serve with your potato wedges or fries sprinkled with your vegetable spice. Enjoy!
