Curried Tofu Noodle Laksa

A deliciously simple red curry pan-seared tofu laksa with all the greens and sprouts you can think of.




Ingredients to serve 2

  • 100g x Tofu - cut into cubes
  • 50g x Bean Sprouts
  • 150g x Pak Choi - leaves roughly shredded
  • 50g x Tenderstem Broccoli - each stem halved
  • 50g x Edamame - take from freezer
  • 100g x Ramen Noodles
  • 5g x Coriander - leaves pulled from stem
  • 275ml x DD Laksa Base
  • 2 x Eggs - Optional
  • 100ml x Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 200g x Tofu - cut into cubes
  • 100g x Bean Sprouts
  • 300g x Pak Choi - leaves roughly shredded
  • 100g x Tenderstem Broccoli - each stem halved
  • 100g x Edamame - take from freezer
  • 200g x Ramen Noodles
  • 10g x Coriander - leaves pulled from stem
  • 550ml x DD Laksa Base
  • 4 x Eggs - Optional
  • 200ml x Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Bring two medium saucepan of water to the boil for use in Step 1.

Washing Instruction

Wash your hands, bean sprouts, pak choi, and tender stem broccoli well. Rinse your coriander thoroughly and drain on paper towel.

Laksa is a spicy noodle soup popular in the Peranakan cuisine of Southeast Asia. Laksa consists of thick wheat noodles or rice vermicelli with chicken, prawn or fish, served in spicy soup based on either rich and spicy curry coconut milk or on sour asam

Step 1 - Ramen Noodles and Boiled Eggs (Optional)

Once your water in your medium saucepan comes to the boil, cook your ramen noodles for 4-5 minutes until just about tender. Drain through a colander and drizzle with a little olive oil - reserve to serve. Boil your eggs in your second medium saucepan for 6-7 minutes, cool under running tap water and peel for serving - depending on your dietary requirements you can include or exclude your eggs.

Step 2 - Laksa Base

Heat a large casserole pan or wok over a high heat, add a few glugs of olive oil and fry your tender stem broccoli, pak choi and edamame for 5-6 minutes until just about tender, transfer to a serving dish. Proceed to add your DailyDish Laksa Base, water and your cubed tofu and cook for 4-5 minutes until your sauce base has heated through and melded.

To serve

Divide your noodles, bean sprouts and greens, laksa base and tofu amongst your servings, finish by sprinkling over your coriander. Enjoy!
