Harissa Roasted Cabbage Creamy Penne

We just can't get enough of roasted cabbage, especially in a creamy sauce with dollops of harissa and sauce clinging penne pasta.




Ingredients to serve 2

  • 200g x Red Cabbage - chunked/chopped roughly
  • 1 x Onion - cut into chunks
  • 2 x Garlic - chopped
  • 2.5g x Vegetable Spice
  • 150g x Penne Pasta
  • 150ml x Cream
  • 2 tbsps x Harissa Paste
  • 200g x Heirloom Tomatoes - halved
  • 2 tbsps x Balsamic Vinegar
  • 5g x Basil - leaves pulled from stem
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 400g x Red Cabbage - chunked/chopped roughly
  • 2 x Onion - cut into chunks
  • 4 x Garlic - chopped
  • 5g x Vegetable Spice
  • 300g x Penne Pasta
  • 300ml x Cream
  • 4 tbsps x Harissa Paste
  • 400g x Heirloom Tomatoes - halved
  • 4 tbsps x Balsamic Vinegar
  • 10g x Basil - leaves pulled from stem
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any "Pantry Items". Preheat your oven to 220°C. Bring a large saucepan of salted water to the boil for use in Step 2.

Washing Instruction

Wash your hands, red cabbage, and heirloom tomatoes well. Rinse your basil thoroughly and drain on paper towel.

Primavera is generally a pasta dish made with lightly sautéed seasonal vegetables.

Step 1 - Oven Charred Cabbage and Onions

Toss your red cabbage and onions chunks along with your chopped garlic and vegetable spice in a large mixing bowl. Scatter onto an oven tray, cover with foil and pop into the oven to roast for 15 minutes. Remove your foil after your initial 15 minutes then continue to roast for 8-10 minutes until nicely charred and tender. Reserve to serve.

Step 2 - Penne Pasta and Balsamic Salad

Once your water has come to the boil, cook your penne pasta for 10-12 minutes until "al dente" Drain through a colander and reserve for the next step. Toss your halved heirloom tomatoes in a medium mixing bowl along with your balsamic vinegar and a few glugs of olive oil, season with salt and pepper to taste.

Step 3 - Primavera Penne

Heat a large casserole pan over med-high heat, now add a drizzling of olive oil and your penne pasta. Cook until heated through then add your cream and cook until your cream clings to your penne, about 2-3 minutes. Season your penne with salt and pepper to taste.

To serve

Divide your primavera penne amongst your servings, top with your oven charred cabbage and onions, dollops of harissa, your balsamic tomato salad, and your picked basil leaves. Enjoy!
