Washing Instruction

Wash your hands, cherry tomatoes and potatoes well. Rinse your italian flat leaf parsley thoroughly and drain on paper towel.

Gino's Tip

Spaghetti ala Puttanesca is an Italian pasta dish invented in Naples in the mid-20th century. Its ingredients typically include tomatoes, olive oil, anchovies, olives, capers and garlic, in addition to pasta. In this recipe, we use the main components to make a delicious Pomodoro variant.

Step 1 - Roasted Fries or Wedges

Toss your potato fries or wedges in a large mixing bowl along with some olive oil, salt and pepper. Scatter onto an oven tray and pop into the oven to roast for 30-35 minutes until lightly browned, crisped and cooked through. Keep your fries on this tray for later and turn your oven setting over to grill.

Step 2 - Puttanesca Meatballs

Meanwhile heat a large frying pan over med-high heat, add a drizzling of olive oil and fry your meatballs for 4-5 minutes until well browned and just about cooked. Proceed to add your DailyDish Puttanesca Base with a dash of water and cook for 2-3 minutes until your sauce has heated through and your meatballs are cooked. Taste and season if need be with salt and pepper.

Step 3 - Assembling your Cheesy Fries

Proceed to drizzle your sauce and meatballs over your cooked fries, top with your cherry tomatoes, grated mozzarella and dried oregano. Pop into the oven to grill for 2-3 minutes until your cheese is gooey.

To serve

Divide your meatball and cheesy puttanesca fries amongst your servings. Enjoy!
