Before You Begin

Prepare your ingredients & cooking utensils. Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C. Toss your butternut chunks in a large mixing bowl with olive oil, salt, and pepper. Toss your green beans in a large mixing bowl with olive oil, salt, and pepper. Rub your tilapia with olive oil and season with salt and pepper. Place onto an oven tray, place your DailyDish Nut Crust on each fillet.

Washing Instruction

Wash your hands and green beans well. Rinse your chives thoroughly and drian on paper towel.

Gino's Tip

Remember once your remove your green beans from the oven they still continue to cook therefore check on them at 10 minutes and if they are lightly browned remove them from the oven.

Step 1 - Roasted Butternut and Greens

Scatter your butternut and green beans onto separate oven trays. Cover your butternut with foil and roast for 15 minutes, remove your foil and continue to roast for 12 minutes until lightly browned. In the last roasting of your butternut add your greens beans and roast for 10-12 minutes until just about cooked - See Gino's Tip.

Step 2 - Sherry Dressing

Whisk together your small diced red onion along with your sherry vinegar and twice its volume in olive oil. Season with salt and pepper. Balance with sugar/sweetener if too tart.

Step 3 - Nut Crust Tilapia and Creamy Chive Butternut

As soon as you put your green beans in the oven place your basa in as well to cook alongside your green beans. Once your butternut has roasted roughly mash it along with your cream cheese, cream, and chopped chives. Taste and season with salt and pepper.

To serve

Divide your rustic butternut mash amongst your servings, and top with your green beans and sherry dressing. Serve with your nut crust tilapia. Enjoy!
