Gino's Tip

Remember once your remove your green beans from the oven they still continue to cook therefore check on them at 10 minutes and if they are lightly browned remove them from the oven.

Step 1 - Roasted Butternut and Greens

Scatter your butternut and green beans onto separate oven trays. Cover your butternut with foil and roast for 15 minutes, remove your foil, scatter over your green beans and continue to roast for 12 minutes until lightly browned - See Gino's Tip

Step 2 - Red Wine Dressing

Whisk together your small diced red onion along with your red wine vinegar and twice its volume in olive oil. Season with salt and pepper. Balance with sugar/sweetener if too tart.

Step 3 - Nut Crust Hake and Creamy Chive Butternut

As soon as you put your green beans in the oven place your hake in as well to cook alongside your green beans. Once your butternut has roasted roughly mash it along with your cream cheese, cream, and chopped chives. Taste and season with salt and pepper.

To serve

Divide your rustic butternut mash amongst your servings, and top with your green beans and sherry dressing. Serve with your nut crust hake. Enjoy!
